Number Of Ingredients 12

1 cup butter Crisco
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon soda
1 teaspoon cinnamon
dash of salt
3 cups quick or old fashioned oats
1 cup raisins
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Beat shortening and sugars until creamy. Add eggs and vanilla, beat well. Combine flour, soda, cinnamon, and salt; mix well. Add oats, raisins, and pecans. Drop by rounded tablespoon onto ungreased cookie sheets. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets. Remove to wire rack and cool completely.

Tips:

- Use high-quality oats. Look for oats that are fresh, plump, and free of debris. Steel-cut oats or old-fashioned oats will work best in this recipe. - Don't overmix the dough. Overmixing will make the cookies tough. Mix the dough just until the ingredients are combined. - Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much. - Bake the cookies at 375°F for 10-12 minutes. The cookies should be golden brown around the edges and still soft in the center. - Let the cookies cool completely before enjoying them. The cookies will continue to firm up as they cool.
