One 12-ounce box vanilla wafers, crushed
1 cup sweetened flaked coconut

1/2 cup milk

Berries, optional
Caramel sauce, optional

Steps:

  • Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
  • In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
  • Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.

1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 stick unsalted butter, softened
3/4 cup granulated sugar
2 large eggs, room temperature
3/4 cup whole milk
1 cup sweetened shredded coconut
1 teaspoon unflavored gelatin
1 cup cold heavy cream
2 tablespoons confectioners' sugar
1/4 teaspoon pure vanilla extract
1 1/2 cups mixed fresh berries, such as blueberries, raspberries, and blackberries

Steps:

  • Preheat oven to 350 degrees. Line a standard muffin tin with paper liners. Whisk together cookie crumbs, flour, baking powder, and salt.
  • Beat butter with granulated sugar on medium speed until pale and fluffy, about 1 minute. Beat in eggs, one at a time. Reduce speed to low and add flour mixture in 3 batches, alternating with milk, beginning and ending with flour mixture and beating until combined after each addition. Fold in coconut.

1 pound vanilla wafer cookies, broken into rough pieces, 7 cups
1/4 teaspoons salt
1 1/4 cup sugar
12 tablespoons unsalted butter, softened, 1 1/2 sticks
six large eggs
1/2 cup whole milk
2 cups sweetened shredded coconut
1 cup pecans, toasted and chopped

Steps:

  • 1. adjust the oven rack to the middle position and heat the oven to 300°. Grease a 9 inch springform pan and set aside.
  • 2. Process half of the cookies in a food processor to fine crumbs, about one minute. Transfer crumbs to a bowl. Repeat with remaining cookies. Stir in the salt and set aside.
  • 3. In large bowl, beat the sugar and butter together with an electric mixer on medium-high speed until light and fluffy, 3 to 6 minutes. Beat in the eggs, one at a time, until incorporated, scraping down the bowl and beaters as needed. Reduce the mixer speed to low and add one third of the cookie crumbs followed by 1/4 cup of the milk. Scrape the batter into the prepared pan, smooth the top, and gently tap the pan on the counter to settle the batter. Bake until the cake is Golden Brown and a toothpick inserted in the center comes out with a few moist crumbs attached, one hour and 20 minutes to 1 hour and 40 minutes, rotating the pan halfway through.
  • 5. Cool cake in the pan for 15 minutes. Run a small knife around the edge of the cake, then remove the sides of the pan. Cool the cake on a wire rack to room temperature, 2 to 3 hours, before serving.
