6 cups fresh raspberries
1 ¼ cups white sugar, divided
¼ teaspoon lemon juice
2 cups heavy whipping cream
1 ½ cups milk
1 teaspoon vanilla bean paste

Steps:

  • Combine raspberries, 1/2 cup sugar, and lemon juice in a saucepan over low heat. Cook and stir until sugar dissolves, about 5 minutes.
  • Press raspberry mixture through a strainer into a bowl. Discard seeds. Refrigerate raspberry puree.

1/2 cup sugar
2 teaspoons fresh lemon juice
2 pints premium vanilla ice cream
Equipment: 12 (1/3-cup) ice pop molds or 12 paper cups and 12 wooden sticks

  • Mash strawberries in a large bowl with a potato masher or a fork. Transfer to a 12-inch nonstick skillet along with sugar and lemon juice and boil over medium heat, stirring occasionally, until slightly thickened, about 10 minutes. 1 quart fresh strawberries, hulled and chopped into 1/4-inch pieces
3 tablespoons light or dark brown sugar
1 tablespoon brandy

Steps:

  • In a medium-size heavy saucepan, combine 1/2 cup granulated sugar with cream and milk. Bring to a simmer; turn off heat.
  • Whisk together egg yolks and remaining 1/2 cup granulated sugar. Whisking constantly, slowly add about half (a cup or so) of hot cream mixture to yolks. Chill mixture in freezer until thoroughly cool but not frozen (15 to 30 minutes).
