Had saved this recipe and finally tried it; every time I've made it, it has been a hit! I do make it with the toffee bits instead of the chocolate chips. It's moist and oh, so tasty! I will be making it for my daughters' birthday cake (one cake, two daughters born two days apart--different years, tho!!!) this year, and promise...

Time 1h

Number Of Ingredients 8

1 pkg (18 1/4 oz.) yellow cake mix
1 pkg (3 1/2 oz.) instant vanilla pudding mix
1 c sour cream
1/2 c vegetable oil
4 eggs
1 Tbsp pure vanilla extract
1 c mini chocolate chips or toffee bits w/ chocolate
vanilla butter glaze (recipe below)

Steps:

  • 1. Combine all ingredients except chips in a large bowl with mixer on low, just to moisten. Scrape the bowl. Beat on medium speed for two minutes.
  • 2. Stir in chips by hand. Pour into greased and floured 12-cup Bundt pan.
  • 3. Bake in 350 oven 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Invert cake onto wire rack. Cool completely. Drizzle with Vanilla Butter Glaze or dust with powdered sugar.
  • 4. Vanilla Butter Glaze Mix 3 tablespoons butter, melted, 2 1/4 cups confectioner's sugar, 3 tbsp. water and 1 1/2tsp Pure Vanilla Extract until smooth. Let stand 3 minutes or until thickened.

Tips:

  • Use a stand mixer or hand mixer to cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, making the cake lighter and more tender.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the batter from curdling.
  • Be sure to scrape down the sides of the bowl after each addition of ingredients. This will help to ensure that all of the ingredients are evenly combined.
  • Do not overmix the batter. Overmixing can develop the gluten in the flour, making the cake tough.
  • Bake the cake in a preheated oven. This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting. This will help to prevent the frosting from melting.

Conclusion:

This vanilla chip cake is a classic dessert that is perfect for any occasion. It is easy to make and always a crowd-pleaser. With its moist and tender crumb, sweet vanilla flavor, and crunchy chocolate chips, this cake is sure to be a hit. So next time you are looking for a delicious and easy-to-make cake, give this vanilla chip cake a try.
