1/3 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
2 large egg yolks, slightly beaten
2 tablespoons butter, softened
2 teaspoons vanilla

Steps:

  • In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
  • Gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
  • Pour pudding into dessert dishes. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.

2 cups milk
2 Tbsp vanilla extract

  • Stir the sugar and cornstarch together. Store your vanilla pudding mix in an air-tight container. It's sized to fit a quart jar.
  • If you don't want to have to add fresh milk to your pudding when you make it, just add 4 cups of powdered milk to the mix, and measure out an extra 2/3 cup of mix for each batch.
  • Combine all the wet and dry ingredients in a sauce pan. Stir continuously over medium heat. It'll take a little while for the dry ingredients to stir in completely. When your pudding thickens and begins to boil, it's done. This should take around 12 minutes.
  • The pudding will continue to thicken as it cools.
