1 whole vanilla bean
2 dates, pitted
1 pinch sea salt
4 cups water

Steps:

  • Place almonds and vanilla bean in a bowl; add enough water to cover completely. Place dates in a separate bowl and add enough water to cover completely. Soak almonds and dates at room temperature, 8 hours to overnight.
  • Drain and discard soaking water from almonds and rinse almonds thoroughly. Drain water from dates and keep water to add to the almond milk, if desired.
  • Combine soaked almonds, vanilla bean, dates, and sea salt in a blender; pour in 3 cups water. Blend on high for 1 minute. Let sit to allow foam to subside, about 1 minute. Add remaining 1 cup water and some of the date water for extra sweetness; blend until almond milk is smooth, about 1 minute.
  • Place a nut milk bag in a quart-size measuring cup or large bowl. Pour almond milk into the bag and lift to drain. Gently squeeze the bag to extract as much milk as possible. Store almond milk in the refrigerator.

  • Position rack in center of oven and preheat to 350°F. Butter eight 3/4-cup soufflé dishes. Coat soufflé dishes with sugar. Arrange soufflé dishes on heavy large baking sheet. Stir milk chocolate and butter in medium metal bowl set over saucepan of simmering water until chocolate mixture is melted and smooth (do not allow bottom of bowl to touch water). Cool chocolate mixture to lukewarm.
  • Using electric mixer, beat egg yolks, whole eggs, and sugar in large bowl until pale, thick, and tripled in volume, about 6 minutes. Fold 1/3 of egg mixture into lukewarm chocolate mixture to lighten. Gently fold chocolate mixture into remaining egg mixture. Spoon into prepared dishes, dividing equally. Smooth tops.
  • Bake until soufflés rise and edges are crisp and dark brown but centers are still soft, about 25 minutes. Dust tops with powdered sugar. Transfer to plates. Serve immediately, passing ice cream separately.

1/2 teaspoon coconut oil (optional*)
Pinch freshly ground black pepper*
1/2 vanilla bean (seeds scraped and entire bean added)
2-3 cardamom pods (crushed)
1 star anise
Pinch ground cayenne pepper
Pinch freshly ground nutmeg
Black peppercorns

Steps:

  • Set a small saucepan over low heat. Add the almond milk, 1 teaspoon honey, turmeric, ginger, cinnamon stick, and black pepper and stir with a whisk until combined.
  • Bring to steaming, just below a simmer. Do not let it come to a boil. Keep just below a simmer, stirring occasionally, for 10 minutes.
  • Remove from heat. Remove the cinnamon stick. If you added other spices that need to be strained out, strain using a fine mesh strainer then return to the pan. Stir in the vanilla and coconut oil (if using). Taste and add additional honey if desired (I like about 2 teaspoons).
  • Use a frother to froth the tea, if desired. Pour into a mug and spoon the froth over the top. Serve.

5 large egg yolks
1/2 cup malted milk powder (such as Carnation)
1 3/4 cup heavy cream
3/4 cup 1% or 2% milk
1/2 cup sugar
1/4 teaspoon kosher salt
2 ounces milk chocolate, finely chopped or grated (1/3 cup)
1 teaspoon vanilla extract
1/2 cup chopped Peanut Brittle , in 1/8-inch pieces

Steps:

  • Make the base
  • 1. In a medium heatproof bowl, whisk the yolks just to break them up, then whisk in the malted milk powder. Set aside.
  • 2. In a heavy nonreactive saucepan, stir together the cream, milk, sugar, and salt and put the pan over medium-high heat. When the mixture approaches a bare simmer, reduce the heat to medium.
  • 3. Carefully scoop out about 1/2 cup of the hot cream mixture and, whisking the eggs constantly, add the cream to the bowl with the egg yolks. Repeat, adding another 1/2 cup of the hot cream to the bowl with the yolks. Using a heatproof rubber spatula, stir the cream in the saucepan as you slowly pour the egg-and-cream mixture from the bowl into the pan.
  • 4. Cook the mixture carefully over medium heat, stirring constantly, until it is thickened, coats the back of a spatula, and holds a clear path when you run your finger across the spatula, 1 to 2 minutes longer.
  • 5. Strain the base through a fine-mesh strainer into a clean container. Set the container into an ice-water bath, wash your spatula, and use it to stir the base occasionally until it is cool. Remove the container from the ice-water bath, cover with plastic wrap, and refrigerate the base for at least 2 hours or overnight.
  • Freeze the ice cream
  • 6. Add the vanilla to the chilled base and stir until blended.
  • 7. Freeze in your ice cream machine according to the manufacturer's instructions and put the container you'll use to store the ice cream into the freezer. Add the milk chocolate and the peanut brittle in the last minute or so of churning, or fold them in by hand after the ice cream comes out of the machine. Enjoy right away or, for a firmer ice cream, transfer to a container and freeze for at least 4 hours.

Steps:

  • Split and scrape vanilla bean: On cutting board, slit the bean lengthwise. Scrape down the length of the bean to scoop out all the seeds. Place the seeds in a little mound on the cutting board. 1/4 cup sugar
2 2/3 cups instant nonfat dry milk powder

Steps:

  • 1. Run a little hot water into a 2 qt pitcher.Add 1/4 cup powdered creamer & 1/4 cup sugar, stir well to dissolve. Add 1/2 tsp vanilla. Stir.
  • 2. Fill pitcher half wull with cold tap water. Add 2 2/3 cup instant nonfat dry milk powder, ix very well. Fill the pitcher the rest of the way full, stir again. Chill and serve. This milk is more palatably to some than straight reconstituted milk.
  • 3. The coffee creamer gives the milk a richer fullnes, while the sugar and vanilla makes it taste sweet & almost dessert like.
  • 4. If you must switch to powdered milk and are having trouble with the flavor, this recipe can make the transition easier.
