Time 55m

Yield 10

Number Of Ingredients 10

4 ½ cups thinly sliced apples
2 ¼ teaspoons lemon juice
1 ½ cups water
¼ cup honey
¼ cup maple syrup
1 whole vanilla bean, split lengthwise and scraped
¼ cup cornstarch
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • Mix apple slices with lemon juice in a large bowl to coat apple slices in juice.
  • Stir water, honey, and maple syrup together in a large pot over medium heat until the honey and syrup are melted into the water; add vanilla bean contents and stir. Mix cornstarch, cinnamon, salt, and nutmeg together in a small bowl; stir into the water to dissolve. Bring the mixture to a boil and cook, stirring constantly, for 2 minutes.
  • Carefully pour apple slices into the water. Bring water again to a boil, reduce heat to medium-low, cover pot with a lid, and cook at a simmer until apples are tender, 6 to 8 minutes.
  • Remove pot from heat and remove lid to allow apples to cool to room temperature, at least 30 minutes.

Tips:

  • Choose the right apples: Use firm, tart apples that hold their shape when baked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and slice the apples evenly: This will help them cook evenly and prevent them from becoming mushy.
  • Don't overcrowd the pie plate: Leave some space between the apples so they can cook properly.
  • Use a combination of sugars: This will give the filling a more complex flavor. Brown sugar adds a rich, caramel-like flavor, while granulated sugar helps to balance out the tartness of the apples.
  • Add some spices: Cinnamon, nutmeg, and ginger are all classic apple pie spices that add warmth and flavor to the filling.
  • Don't overcook the filling: The apples should be tender but still hold their shape. Overcooking will make them mushy.

Conclusion:

This vanilla maple apple pie filling is the perfect way to enjoy the flavors of fall. It's easy to make and can be used in a variety of desserts, from pies and tarts to muffins and pancakes. So next time you're looking for a delicious and versatile apple filling, give this recipe a try. You won't be disappointed!
