½ cup butter, softened
1 cup white sugar
1 egg
1 tablespoon vanilla extract
1 ⅓ cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter and sugar in a mixing bowl with an electric mixer until light and fluffy; beat in egg and vanilla extract. Combine flour, baking powder, and salt in a bowl and mix the dry ingredients thoroughly into butter mixture. Drop cookies about 2 inches apart, 1 teaspoon at a time, onto ungreased baking sheets.

2 cups plain flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup sugar
2/3 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon grated lemon, zest
additional sugar (for topping)

Steps:

  • Sift together flour, baking powder and salt.
  • Whisk eggs in a large bowl until frothy.
  • Add sugar, oil, vanilla and lemon zest; mix well.
  • Stir the dry ingredients into egg mixture till well blended.
  • Chill, covered for 30 minutes or more.
  • Drop cookie dough by teaspoonfuls 2 inches apart onto ungreased baking sheets.
  • Dip bottom of a flat-bottomed glass with water and dip glass into additional sugar.
  • Press top of each cookie gently with the glass to flatten.
  • Repeat with water and dipping in sugar for each cookie.
  • Bake in 400° oven till cookies are lightly browned.

1 1/2 c white sugar
2 eggs (room temp)
3 -4 c all purpose flour
1 tsp baking powder and 1/4 tsp salt
3/4 c milk
3 Tbsp vanilla extract
GLAZE (OPTIONAL)
1 Tbsp cooled melted butter
1 c powdered sugar
1 Tbsp vanilla extract
add milk to desired thiness

Steps:

  • 1. Cream butter, sugar, eggs to a light yellow color. Takes maybe 5 minutes. Color will be almost white. If your using a standing mixer use speed 4. Then add vanilla, just a couple of turns on low.
  • 2. Sift flour, baking powder, and salt. Add alternately with milk. Always ending with flour mix.
  • 3. Bake at 350 degrees, preheated oven for 8-10 mins. Should be golden brown and spring back when the tops are touched. Remove from cookie sheet immediately to cooling rack.
  • 4. If you choose to glaze them. I've done it both ways cookie cooled or warm. It didnt matter. Worked well both ways. To save on clean up I place parchment or wax paper under the cooling rack when I glazed them.
