Yield Makes 24 cereal treats

Number Of Ingredients 7

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).

ONE UNBAKED PIE SHELL
VANILLA FILLING
1/2 c brown sugar
1 Tbsp flour
1/4 c corn syrup
1 c water
1 egg
2 tsp vanilla
CRUMBS
1 c flour

  • 3. Pour cooled sauce in an unbaked pie crust.Add crumbs on top
  • 4. Bake at 350 degrees for 40 minutes or until golden brown

Tips:

  • To make sure your vanilla crispie treats turn out perfectly, use a candy thermometer to monitor the sugar temperature. The sugar should reach 300 degrees Fahrenheit (149 degrees Celsius) before you remove it from the heat.
  • If you don't have a candy thermometer, you can use the cold water test to check if the sugar is ready. To do this, drop a small amount of the sugar mixture into a bowl of cold water. If the sugar forms a hard, brittle ball, it is ready. If it is still soft and pliable, continue cooking.
  • Be careful when handling the hot sugar mixture. It can cause severe burns. Always wear heat-resistant gloves and protective clothing when working with hot sugar.
  • Let the vanilla crispie treats cool completely before breaking them into pieces. This will help prevent them from crumbling.
  • Store the vanilla crispie treats in an airtight container at room temperature for up to 2 weeks.
