1-1/2 cups shortening
2-2/3 cups packed brown sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
4 cups old-fashioned oats
FILLING:
3/4 cup shortening
3 cups confectioners' sugar
1 jar (7 ounces) marshmallow creme
1 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. Cream together shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk the next 5 ingredients; gradually beat into creamed mixture. Stir in oats. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool., For filling, cream shortening, confectioners' sugar and marshmallow creme. Add enough milk to achieve spreading consistency. Spread filling on the bottoms of half of the cookies; cover with remaining cookies.

COOKIES:
1 c all purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c butter, unsalted-room temperature
1/2 c granulated sugar
1/2 c light brown sugar, firmly packed
1 large egg
2 Tbsp vanilla bliss liquid coffee creamer
2 1/2 c old fashioned oats
GLAZE:
3 Tbsp vanilla bliss liquid coffee creamer
1 tsp grated orange peel
1 c powdered sugar

Steps:

  • 1. Preheat oven to 350^. Combine the first 4 ingredients in a medium bowl; stir;set aside.
  • 2. Beat the butter and sugars in a medium mixer bowl at medium-low until just combined. Increase speed to medium and beat for 1 minute or until light and creamy, Add egg and Vanilla Bliss creamer, beating until just incorporated. With mixer at low speed; add flour mixture, mix just until smooth; gradually add oats, mix well.
  • 3. Scoop rounded dough by level tablespoon, then make into balls. Place on ungreased baking sheets, space about 2-inches apart. Using fingertips, gently press each ball to 3/4 inch thick. Or use bottom of a suggared glass.
  • 4. Bake 13-15 minutes - just until golden brown and edges are crisp. Cool for 2 minutes on baking sheets before removing then place on cooling rack to cool completely. --- Glaze: Combine all ingredients in a medium bowl; stir well. With a fork or spoon ,drizzle over cookies. Allow glaze to set for 15 minutes before serving.
