Nonstick vegetable oil spray
4 cups cake flour, divided
2 teaspoons baking powder, divided
1 teaspoon baking soda, divided
1/2 teaspoon kosher salt, divided
1 1/2 cups (3 sticks) unsalted butter, room temperature, divided
3 1/2 cups granulated sugar, divided
8 large eggs, separated
2 teaspoons vanilla extract, divided

For the Vanilla Syrup:
1/4 cup granulated sugar
1 vanilla bean, split lengthwise
For the Orange Cream-Cheese Frosting:
4 (8-ounce) packages cream cheese, chilled
1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
2 teaspoons finely grated orange zest
2 tablespoons fresh orange juice

Steps:

  • Bake the Buttermilk Cake:
  • Place a rack in middle of oven; preheat to 350°F. Lightly coat cake pans with nonstick spray and line bottoms with parchment paper. Whisk 2 cups flour, 1 tsp. baking powder, 1/2 tsp. baking soda, and 1/4 tsp. salt in a medium bowl; set aside.

  • Using electric mixer on medium speed, beat 4 egg whites in another large bowl until soft peaks form, 2-3 minutes. Slowly add 1/4 cup granulated sugar and continue to beat until stiff, glossy peaks form, about 3 minutes more. Fold half of the egg whites into flour mixture, then gently fold in remaining egg whites.
  • Scrape batter into prepared pan; smooth surface. Bake, rotating pan halfway through and covering with foil during the last 15 minutes of baking, until golden brown, firm to the touch, and a tester inserted into the center comes out clean, 45-50 minutes. Transfer pan to a wire rack and let cake cool.
  • Repeat steps with second prepared pan and remaining cake ingredients to bake the second layer.
  • Make the Vanilla Syrup:
  • Combine granulated sugar and 1/4 cup water in a medium saucepan. Scrape in vanilla seeds, add pod, and stir to combine. Bring to a boil, cover, and steep at least 15 minutes. Set aside to cool. Discard pod before using.
  • Make the Orange Cream-Cheese Frosting:
  • Using electric mixer on medium-high speed, beat cream cheese and butter in a large bowl until smooth, about 1 minute. Beat in orange zest, orange juice, and vanilla. Reduce mixer speed to medium and beat in powdered sugar, scraping down bowl as needed, until light and fluffy, 2-3 minutes.
  • Assemble the cake:
  • Spread 1 Tbsp. frosting in the center of a platter. Place 1 cake layer, top side down, in the center. Using a pastry brush, brush 3 Tbsp. vanilla syrup over top of cake. Using an offset spatula, spread 1 cup frosting evenly over top. Arrange 6 oz. raspberries in a ring around perimeter of cake, pressing to adhere. Fill interior of ring with 6 oz. raspberries. Spread 1 cup frosting over raspberries inside of ring (do not frost raspberries at the perimeter).
  • Carefully place second cake layer, top side down, on frosted raspberries, gently pressing down to secure. Brush 3 Tbsp. syrup over top of cake with pastry brush. Spread 2 1/2 cups frosting evenly over top and sides, carefully covering raspberries. Chill at least 30 minutes to let frosting set.
  • Remove cake from refrigerator. Frost top and sides, swirling decoratively, making sure to cover bottom of platter; reserve remaining frosting for another use. Chill at least 30 minutes or up to overnight to let frosting set. Before serving, top cake with remaining 3 oz. raspberries and edible flowers, if using.

Even if you use 3 cakes, make sure you split them, I make that suggestion due to the horrible review that was recently left. I am trying to dummy proof this recipe, if you know what you are doing then go for it. This cake really is worth the time it takes to make it. The frosting is delicate and so, so delicious! The cake is moist and dense with a rich vanilla, butter flavor. I have gotten nothing but rave reviews on this cake. Also, this is a huge cake! It will probably serve more than 12-16. I found that 6 cups of strawberries was a bit too much for me but it depends on how many strawberries you like. After reading the very bad review left recently, I must insist that if you are looking for a lowfat cake please DO NOT make and review my cake. The nutrition info is CLEARLY posted. I guess some folks still take out their frustration on line, clearly.

1 lb firm apple, peeled, cored and chopped into fine pieces
1 tablespoon brandy
1 3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1 large pinch ground cloves
1 teaspoon baking powder
6 ounces unsalted butter
1/2 of a vanilla bean
6 eggs, separated
2 teaspoons vanilla extract
1/4 teaspoon salt
1 1/4 cups sugar
4 ounces unsalted butter
7 ounces cream cheese
3/4 cup powdered sugar
seeds from 1/2 vanilla bean

Steps:

  • CAKE:.
  • Preheat oven to 350 degrees. Line the bottom of a 10-inch springform cake pan with parchment lined bottom and set aside.
  • Placed prepared apples in a bowl and pour brandy over the apples.
  • Sift the flour, cinnamon, cloves and baking powder, and set aside.
  • Strip the vanilla seeds from the bean, then place the seeds, pod and butter into a small saucepan.
  • Cook over low heat until the butter turns brown it will take on a nutty smell and will have an intense vanilla flavor.
  • Remove the vanilla bean and let cool to room temperature.
  • Separate the eggs and whip the yolks with the vanilla extract and salt. When the egg yolks start to change color and start to get fluffy, add 3/4 cup of the sugar and continue to whip until light in color.
  • Fold in the butter mixture, then fold in the sifted flour mixture (the batter will be thick).
  • Fold in apples and Brandy.
  • Whip the egg whites until fluffy, then add the remaining 1/2 cup of sugar and continue to whip until stiff.
  • Fold the whites into the cake batter in thirds.
  • When well mixed, pour into the cake pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool on a wire rack.
  • When cool, run a butter knife around the edge to loosen then turn out onto a plate and top with vanilla cream cheese frosting.
  • FROSTING:.
  • Place the unsalted butter, vanilla seeds and the powdered sugar in the mixer with the paddle attachment (if available).
  • Beat until soft and well creamed.
  • Add the cream cheese and continue to mix until well combined.
  • Spread on top of the cooled cake. Refrigerate the cake until the frosting is firm, about 30 minutes.

1 cup (2 sticks)unsalted butter, room temperature
4 cups powdered sugar
1/2 cup seedless strawberry jam
3/4 cup chilled heavy whipping cream
Cake:
3 cups cake flour
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
7 large eggs
2 Tbsp vanilla extract
1 cup sour cream (can use low fat)
6 tbsp plus 1/3 cup seedless strawberry jam
2 1/4 lbs strawberries, hulled, sliced (about 6 cups) divided

  • Make the Frosting 1) Put a small/medium bowl in the freezer to chill. In a separate large mixing bowl, beat cream cheese and butter until smooth. Beat in sugar, then jam. Remove that chilled bowl from the freezer and beat cream in that chilled bowl until peaks form. Fold whipped cream into frosting. Cover, chill for a couple of hours until it's firm enough to spread. (If you are in a hurry, you could put the frosting in the freezer to chill quickly.) Make the Cake 2)Preheat the oven to 325 degrees F. Butter and flour two 9-inch cake pans with 2-inch high sides.(Can use 10 inch springform pans). In a medium bowl, whisk together flour, salt, baking powder, and baking soda. In a large bowl, cream butter and sugar together until light and fluffy. Add egss, one at a time, beating after each addition. Beat in vanilla. Add sour cream, and beat for 30 seconds. Add flour mixture in three additions, beating to blend after each addition. Divide batter into prepared pans. 3) Bake cake until a toothpick inserted into the center comes out clean, 50 - 60 minutes. Remove from oven and cool for 10 minutes. Run a sharp knife around the edges of the pans, then turn cakes out onto a rack to cool completely. You can put the two cake layers in the freezer for about an hour to make the cake assembly easier. 4) Using a serrated knife, divide each layer in half horizontally. Place one half, cake side down on a cake plate. 5) Spread 3 tbsp of strawberry jam over the cake, then spread 3/4 c of the frosting over the jam. 3 c cake flour
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 c sugar
1 c unsalted butter, room temperature
7 large eggs
2 Tbsp vanilla extract

6 Tbsp plus 1/3 cup seedless strawberry jam
2 1/4 lb strawberries, hulled, sliced (about 6 cups), divided
FROSTING
16 oz cream cheese, room temperature (low-fat works)
1 c unsalted butter, room temperature
4 c powdered sugar
1/2 c seedless strawberry jam
3/4 c heavy whipping cream, chilled

Steps:

  • 1. FOR CAKE: Prepare two 9-in cake pans with a coating of butter and flour; set aside.
  • 2. Whisk together flour, salt, baking soda and powder; set aside. In a separate, larger bowl, cream together your sugar and butter. You want it to reach a light, fluffy consistency. Add eggs, one at a time, beating after each addition. Add vanilla and combine well. Next, do the same with your sour cream. Finally, beat in your flour mixture, 1/3 at a time. Pour batter evenly into prepared pans.
  • 3. Bake in a 350 degree pre-heated oven cake until a toothpick inserted into the center comes out clean, 50-60 minutes. Remove and let cool for about 10 minutes. Loosen cake from pan by carefully running the edge of a knife around the pan. Turn out onto a cooling rack; let cool completely.

  • 7. Place once half onto your serving platter, cake side down. Start layering on your filling, beginning with a smear of 3 tablespoons of jam. Follow that by spreading on 3/4 cup of your frosting and finally 3/4 cup of the sliced berries (make a single layer of the berries, don't just toss them on.) Repeat this process two more times with cake layer, jam, frosting, and strawberries.
  • 8. When you reach the top cake layer, you're nearly done! Frost the outside of the entire cake with a thin layer of icing, about 2 cups worth. This is your crumb coat. Use the remaining icing to thoroughly frost the cake and make it pretty. We took the suggestion of swirling the remaining strawberry jam over the iced cake... so pretty!

224 g (8oz) cream cheese, room temperature
1 cup (226g/2 sticks) unsalted butter, room temperature

  • Preheat the oven to 180°C/350°F. Butter three 20cm (8in) round cake pans. Line the bottom of each with a round of parchment paper and butter the paper. Combine the flour, 1 ¾ cups (350g) of the sugar, baking powder, salt and poppy seeds in the large bowl of an electric mixer.
