12 ounces fresh cranberries
3 jalapeno peppers (finely chopped)
1 shallot (minced)
¼ cup green onion (chopped)
¼ cup chopped cilantro
2 tablespoons chopped fresh mint
¼ cup sugar
2 tablespoons apple cider vinegar
1 tablespoon honey
Juice from 1 small lime + some lime zest
½ teaspoon salt
½ teaspoon black pepper

Steps:

  • Rinse the cranberries then transfer them to a food processor. Pulse a few times to finely chop them. Do not overprocess.
  • Transfer the chopped cranberries to a large bowl and add the remaining ingredients (jalapeno, shallot, green onion, cilantro, mint, sugar, vinegar, honey, lime juice and zest, and salt and pepper).
  • Mix well. Seal and refrigerate at least 1 hour to let the flavors mingle. It's even better the next day.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Chop 1 cup raw cranberries in a food processor and add to cranberry sauce. Stir in 1 thinly sliced jalapeno, 1 tablespoon lime juice and 1 teaspoon each honey and salt. Let cool to room temperature. Just before serving, add 2 tablespoons chopped cilantro.

My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share!

1 jalapeno, coarsely chopped
1/2 white onion coarsely chopped, covered and microwaved for 1 minute
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/2 cup Mexican-flavored canned tomatoes, drained and chopped
Kosher salt and freshly ground black pepper
Serving suggestion: Serve with Turkey Taquitos, recipe follows.
2 cups plus 1 tablespoon vegetable oil
1/2 white onion, finely chopped
1 clove garlic, minced
1 tablespoon minced jalapeno
1 1/2 cups shredded cooked turkey
1 1/2 cups shredded jack cheese
1/2 cup Mexican-flavored canned tomatoes, drained and chopped

18 white or yellow corn tortillas

Steps:

  • Place the cranberry sauce, cilantro, lime zest, lime juice, jalapeno pepper, onion, red pepper, green pepper, tomatoes, and salt, and pepper, to taste in a food processor and pulse until blended, but still chunky. Serve with Turkey Taquitos.
  • Sweat the onion, garlic, and jalapeno in a saute pan with 1 tablespoon of vegetable oil. Remove from the heat and add to a large bowl. To the bowl, add the shredded turkey, cheese, tomatoes and season with salt, and pepper, to taste. Mix the ingredients thoroughly.
  • Warm the tortillas in the microwave for 10 seconds so they are pliable.
  • Fill the tortillas with a tablespoon of filling and roll into a thin taquito, securing with a toothpick. Keep the taquitos covered with a damp towel before cooking otherwise the corn tortillas will dry out and crack. Heat 2 cups oil in a straight-sided pan to 350 degrees F. Place the taquitos in the hot oil in batches and shallow fry until crisp, rolling to cook all sides, about 3 minutes.
  • Drain the taquitos on paper towels and salt. Remove the toothpicks before serving.

1 large granny smith apple, peeled, cored and cut into chunks
1/2 large sweet red pepper, seeded and cut into chunks

1/3 cup apple juice
3 tablespoons chopped fresh cilantro
2 tablespoons chopped pickled jalapeno peppers or 2 tablespoons use 1 medium fresh jalapenos
1 teaspoon grated lime zest
1 (14 ounce) package spinach tortillas

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
  • Add this mixture to the cranberry mixture and mix well to blend.
  • Spoon into jars with a cover and refrigerate.
  • To prepare Tortillas:.
  • Heat oven to 375°F.
  • Using a tree-shaped cookie cutter, cut 6 trees from each tortilla, or cut the tortillas into wedges.
  • Place cut tortilla on an ungreased cookie sheets.
  • Bake in preheated 375 F oven for 8 minutes or until crisp.
  • You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.
  • Store tortilla chips in a plastic bag.
  • Serve cranberry salsa with tortilla chips.
  • Frozen cranberries can also be used to make the salsa.
