½ cup packed brown sugar
½ cup ketchup
1 ½ pounds lean ground beef
¾ cup milk
2 eggs
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 small onion, chopped
¼ teaspoon ground ginger
¾ cup finely crushed saltine cracker crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  • In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
  • Bake in preheated oven for 1 hour or until juices are clear.

I found this recipe 25 years ago and and have been tweaking it ever since to make it our family favorite! It is the only meatloaf my family asks for! It is requested at church potlucks!

1 c brown sugar, firmly packed
3/4 c ketchup
3 lb ground beef
3 eggs
1 pkg ritz crackers (1 sleeve) crumbled
1 medium onion chopped small
1 medium bell pepper chooped small
salt to taste
pepper to taste
1 Tbsp garlic powder

Steps:

  • 1. Press brown sugar tightly in bottom of loaf pan. Spread ketchup evenly on top of the brown sugar.
  • 2. In a separate bowl, thoroughly mix the rest of the ingredients. Form into a loaf and place on top of the brown sugar/ketchup in the loaf pan.
  • 3. Bake meatloaf in a 350 degree oven for 1 hour or until juices run clear.
  • 4. To serve, invert loaf pan on serving dish. Allow just a moment for all of the juices to flow down over the meatloaf onto the serving dish. Slice to desired thickness. Serve with your favorite creamed potatoes. The "gravy" from the meatloaf on your creamed potatoes is to die for!!! Bon apetite!

  • Mix together ketchup, brown sugar and water and pour into an 8x4 loaf pan.
