Time 40m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 11

4 tablespoons butter
1/2 cup orange juice
1/2 cup sugar
2 cups flour
1/4 teaspoon salt
1 tablespoon baking powder
3 -4 tablespoons shortening
3/4 cup milk
4 tablespoons butter, softened
1/4 cup sugar
1/2 teaspoon cinnamon

Steps:

  • For the topping:.
  • Combine ingredients in a saucepan and cook over medium heat until butter and sugar melt, about two minutes.
  • Divide the topping among a standard muffin tin.
  • Do not line the muffin tin with paper baking cups.
  • For the biscuits:.
  • Preheat the oven to 425 degrees.
  • Sift the flour, salt and baking powder into a large bowl.
  • Cut in the shortening with two knives or a pastry blender until it forms coarse, uneven crumbs.
  • Add the milk.
  • Mix well, but with a light touch.
  • On a flour-dusted surface,roll the dough into a large rectangle.(approx 11x9).
  • Spread with butter.
  • Mix the sugar and cinnamon and sprinkle it over the dough.
  • Roll as you would a jelly roll and slice into 12 biscuits.
  • Place a single biscuit in each muffin cup.
  • Bake until golden, about twenty minutes.
  • Cool a couple of minutes, then invert cautiously onto a plate, taking care that the sticky topping doesnt burn you.

Tips:

  • Use fresh oranges for the best flavor. If you don't have fresh oranges, you can use canned mandarin oranges, but the flavor will not be as good.
  • Be sure to zest the oranges before juicing them. The zest is where most of the flavor is, so you don't want to miss out on it!
  • Don't overmix the batter. Overmixing will make the biscuits tough. Just mix until the ingredients are combined.
  • Drop the biscuit dough by rounded tablespoons onto the prepared baking sheet. Don't crowd the biscuits, or they will not cook evenly.
  • Bake the biscuits until they are golden brown on top. This should take about 12-15 minutes.
  • Serve the biscuits warm with butter and honey. You can also top them with whipped cream or ice cream, if desired.

Conclusion:

Upside-down orange biscuits are a delicious and easy-to-make treat that is perfect for breakfast, brunch, or dessert. They are also a great way to use up any leftover oranges you have on hand. With their sweet and tangy flavor, these biscuits are sure to be a hit with everyone who tries them!
