When you're in the mood for a meaty, savory comfort-food classic, serve Alton Brown's Shepherd's Pie from Good Eats on Food Network.

Provided by Alton Brown

Categories     main-dish

Time 1h30m

Yield 8 servings

Number Of Ingredients 21

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

UPDATED SHEPHERD'S PIE

Updated Shepherd's Pie image

I found this recipe in a Kraft Food & Family magazine and adapted it slightly to fit our tastes. I decreased the amount of beef stock and added the W sauce to make it slightly richer and thicker. DBF ate 2/3 of the pan the first time I made this, so it is definitely a hit around here. For faster prep, use leftover mashers. You could probably also use potato flakes, but I don't like those so I haven't tried it that way. DBF likes to eat his pie with HP sauce; I like it the way it is.

UPDATED SHEPHERD'S PIE

I found this recipe in a Kraft What's Cooking magazine. Shepherd's Pie is one of my husband's all-time favourite dishes and I love new ways to make things healthier, so I made a double recipe and brought to a friend's place as she had just had a baby, and everybody loved it - there were no leftovers. Even the young, finicky toddlers gobbled it up.

Tips:

  • Use the right meat: Ground beef or lamb is the traditional choice for shepherd's pie, but you can also use other ground meats such as pork, turkey, or venison. Just be sure to adjust the cooking time accordingly.
  • Don't overcook the meat: Overcooked meat will be tough and dry. Cook the meat just until it is browned and no longer pink in the center.
  • Use a variety of vegetables: Adding a variety of vegetables to your shepherd's pie will give it more flavor and nutrition. Some good choices include carrots, peas, celery, onions, and corn.
  • Season the filling well: Don't be afraid to season the filling generously. Salt, pepper, garlic, and herbs are all good choices.
  • Use a good quality cheese: The cheese is what will bind the filling together and give it a rich, creamy flavor. Use a cheese that melts well, such as cheddar, mozzarella, or Gruyère.
  • Don't overcook the mashed potatoes: Overcooked mashed potatoes will be gluey and unappetizing. Cook the potatoes just until they are tender and can be easily mashed.
  • Brown the mashed potatoes: Browning the mashed potatoes will give them a nice crispy crust. To do this, simply spread the mashed potatoes in an even layer in a baking dish and bake them in a preheated oven until they are golden brown.

Conclusion:

Shepherd's pie is a delicious and comforting dish that is perfect for a weeknight meal or a special occasion. With its hearty filling, creamy mashed potatoes, and melted cheese, it is sure to be a hit with everyone who tries it. So next time you're looking for a satisfying and easy-to-make meal, give shepherd's pie a try. You won't be disappointed!
