LEMON HERB MARINADE
This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

SPICED HERB MARINADE FOR FISH
Chermoula is a traditional North African marinade for fish, especially in Morocco where, surprisingly, it's often used with shad. It has become very popular recently with North American restaurant chefs as a quick and easy (and cheap!) way to add lots of flavor to bland fish. Many old-fashioned recipes don't call for cilantro and parsley at all, but the fresh flavor of the green herbs adds a great deal to the preparation.

Steps:
- Chop the cilantro and parsley leaves together to a very fine mince. You should have 1 cup of minced herbs. Transfer to a saucepan.
- Crush the garlic with the sea salt in a mortar, or using the back of a spoon in a small bowl, to make a paste. Stir in the cumin, dried pepper, paprika, olive oil, and lemon juice. Add to the saucepan with the herbs and mix well.
- Have the fish steaks ready in a baking dish large enough to hold them all in one layer.
- Set the herb mixture over medium-low heat and warm until it is very hot, but not boiling. Taste and adjust the seasoning. When it is the way you want it, pour the warm marinade over the fish steaks. Cover with plastic and set aside for an hour or so.
- When you are ready to cook, preheat the oven to 350°F.
- Remove the plastic wrap and transfer the fish with their marinade to the oven. Bake for 20 to 30 minutes, or until the fish is done, basting every 5 minutes or so with the marinade.
- Serve immediately, spooning a little of the marinade over each serving.

Tips:
- Choose the Right Herbs: Select herbs that complement the protein you're marinating. For example, rosemary and thyme pair well with beef, while oregano and basil are great for chicken.
- Use Fresh Herbs Whenever Possible: Fresh herbs provide the most flavor and aroma to your marinade. If you don't have fresh herbs on hand, dried herbs can be used, but they should be added in smaller quantities.
- Don't Overcrowd the Marinade: Make sure there is enough marinade to cover the protein completely, but don't overcrowd it. Overcrowding can prevent the marinade from penetrating the protein evenly.
- Marinate for the Right Amount of Time: The marinating time will vary depending on the protein and the desired level of flavor. Generally, thinner cuts of meat or seafood can marinate for a shorter period of time, while thicker cuts should marinate for longer.
- Keep the Marinade Cold: Always marinate your protein in the refrigerator to prevent bacteria growth. If you're marinating for an extended period of time, you may need to transfer the marinade to a cooler with ice.
- Discard the Marinade After Use: Never reuse marinade that has been in contact with raw meat or seafood. Discard it after use to prevent the spread of bacteria.
Conclusion:
Using a zesty herb marinade is a great way to add flavor and moisture to your protein before cooking. With the right combination of herbs, you can create a marinade that will enhance the natural flavor of your protein and make it a star of your meal. Remember to choose the right herbs, use fresh herbs whenever possible, don't overcrowd the marinade, marinate for the right amount of time, keep the marinade cold, and discard the marinade after use. Experiment with different herbs and flavors to find the perfect marinade for your next dish.
