2 cups buttermilk
1 tablespoon hot pepper sauce
4 skinless, boneless chicken breast halves, cut into bite-size pieces
2 ½ cups panko bread crumbs
6 tablespoons grated Parmesan cheese
1 tablespoon onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
cooking spray

Steps:

  • Stir buttermilk and hot sauce together in a bowl; add chicken and stir to coat. Marinate chicken in refrigerator at least 1 hour.
  • Lightly grease a baking sheet.
  • Mix panko bread crumbs, Parmesan cheese, onion powder, garlic powder, cayenne pepper, and paprika in large shallow bowl.
  • Remove chicken from marinade, shaking pieces to remove excess moisture. Discard the remaining marinade.
  • Gently press chicken pieces into the panko mixture to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange breaded chicken onto prepared baking sheet.

1 Tbsp worcestershire sauce
1 tsp whole grain mustard
1 large french fried onions package
6 chicken thighs, skinless or 4 boneless skinless breasts.

Steps:

  • 1. In a small wide mouth bowl, combine butter, worcestershire sauce and mustard. Crush the fried onions into a separate bowl. (This will be your breading)
  • 2. Dip chicken in butter mixture, then coat with onions. Prepare a baking dish with olive oil (I use a cast iron skillet); Put the coated chicken pieces into the skillet and drizzle the remaining butter over the chicken.

3 1/2 c Ice water
1 c Plain nonfat yogurt : BREADING:
1 c Italian breadcrumbs
1 c All-purpose flour
1 tb Old Bay seasoning
1/2 ts Garlic powder
1/2 ts Creole seasoning
1/8 ts Freshly ground black pepper
1 d Cayenne pepper
1/2 ts Dried thyme
1/2 ts Dried basil
1/2 ts Dried oregano

Steps:

  • Preheat the oven to 400 degrees. Coat a baking sheet with three sprays of the vegetable oil. Put the chicken in a large bowl with the ice water. Put the yogurt in a medium bowl. Set both bowls aside. Toss all the breading ingredients into a large tightly-sealed plastic bag. Seal and shake well to mix. Remove two pieces of chicken from the ice water. Roll each piece in the yogurt. Put the chicken into the plastic bag reseal and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Repeat the process until all 12 pieces are breaded. Spray the chicken lightly with the vegetable oil.
