Categories     Egg

Number Of Ingredients 8

3 cups bread flour
1 cup buttermilk
2 tablespoons (packed) brown sugar
1 1/2 teaspoons kosher salt
1 package (.25 ounce) active dry yeast
1 egg yolk
2 tablespoons canola oil
1 stick butter

Steps:

  • Place the bread flour, buttermilk, brown sugar, salt, yeast, and egg yolk into a bread machine. Using the Dough setting, allow the machine to mix the ingredients until moist.
  • Pause the cycle and pour in the oil, then let the machine continue to the end of the Dough cycle.
  • Grease muffin pans or a baking sheet, and set aside.
  • Punch down the dough, and remove it from the machine. Divide the dough into 12 equal parts, form into round, smooth rolls, and place them into the cups of the muffin pans or on baking sheet, making sure the rolls don't touch each other.
  • Cover the rolls with a kitchen towel, and let rise in a warm place until double, about 25 minutes
  • While the rolls are rising, preheat oven to 350 degrees F (175 degrees C).
  • Bake the rolls in the preheated oven for 20 minutes, or until golden brown. Rub the tops of the hot rolls with a stick of butter for a soft crust, cool the rolls slightly, and serve warm.

COUNTRY WHITE BREAD OR DINNER ROLLS (BREAD MACHINE)

Country White Bread or Dinner Rolls (Bread Machine) image

We think this is the best white bread recipe ever! It is a tender bread with a slightly sweet taste. My dinner rolls using this dough are so good, everyone always loves them. It doesn't take to long to make them when the bread maker does most of the work. The cook time is listed for the rolls only because everyone's bread makers cooks at different rates. Mine is older and a regular loaf will take 4 hours and 10 minutes. I have found that 15 balls of dough fit perfectly in the 9X13 pan with sides touching after raising the 2nd time but they can be made whatever size you want. I hope you enjoy this great bread as much as we do.

Time 45m

Yield 15 serving(s)

Number Of Ingredients 10

1 cup water, plus
1 tablespoon water (70-80 F)
1 large egg
4 1/2 teaspoons vegetable oil
3 1/4 cups bread flour
1/4 cup sugar
1 1/2 teaspoons salt
2 1/4 teaspoons instant yeast
2 tablespoons melted butter (for dinner rolls only) (optional)
2 tablespoons shortening (for dinner rolls only) (optional)

Steps:

  • In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer.
  • Select the basic bread setting.
  • Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour.
  • Bake as normal.
  • For dinner rolls.
  • Mix in bread machine but use only the dough option.
  • Lightly grease a 9 x 13 baking pan (I always use a metal pan).
  • When dough is finished shape into 15 uniformly sized balls. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out.
  • Cover and let the rolls rise in a warm, draft free place until risen to the desired size.
  • I let them about double in size.
  • Bake in a 350° oven about 12-15 minutes until golden brown.
  • After removing from the oven, brush the tops of the rolls with melted butter.
  • Take out of pan and let completely cool before storing.

Tips for Making Perfect Uncle White's Bread Machine Rolls:

Use fresh and high-quality ingredients:
  • Fresh yeast: Check the expiration date and ensure it's active and bubbly when mixed with warm water and sugar.
  • Lukewarm liquids: Liquids should be between 105°F (41°C) and 115°F (46°C) to activate the yeast. Use a thermometer to measure the temperature accurately.
  • Proper measuring: Use a kitchen scale or measuring cups to ensure accurate measurements of ingredients. This is crucial for achieving the right consistency and texture in your rolls.
Follow the recipe instructions precisely:
  • Add ingredients in the correct order: Follow the recipe's instructions for adding ingredients in the proper order to ensure the bread machine mixes and kneads the dough appropriately.
  • Adjust liquid or flour as needed: If the dough is too dry, add a little more liquid; if it's too wet, add a bit more flour. The dough should be soft and slightly sticky but not too wet or dry.
Use the correct bread machine settings:
  • Dough cycle: Choose the dough cycle on your bread machine, which mixes and kneads the dough without a baking cycle.
  • Shape the dough: After the dough cycle is complete, remove the dough from the bread machine and shape it into rolls according to the recipe's instructions.
  • Proof the rolls: Allow the shaped rolls to rise in a warm place for about 30 minutes or until they have doubled in size.
Bake the rolls properly:
  • Preheat the oven: Preheat your oven to the temperature specified in the recipe before baking the rolls.
  • Baking time: Bake the rolls for the recommended time, or until they are golden brown and sound hollow when tapped.
  • Let the rolls cool: Allow the baked rolls to cool slightly before serving or storing them.
