Very simply curried chops. This is a recipe that my Mom always made when I was a kid. We are not sure who Uncle Percy is. Shirley, who gave this recipe to my Mom, doesn't have an Uncle Percy so we are not sure. I recently got her to send it to me again as I wanted to make it. Preparation time does not include the marinating time of approximately 1 hour.

750 g lamb lamb neck chops
1 garlic clove, crushed
2 tablespoons flour
1 1/2 tablespoons sugar
2 tablespoons tomato sauce
2 tablespoons vinegar
1/2 teaspoon ground ginger
1 teaspoon curry powder
salt and pepper
2 cups water

Steps:

  • Trim fat from chops.
  • Crush garlic.
  • Combine all the ingredients except chops.
  • Put chops in a baking dish.
  • Pour combined ingredients over chops.
  • Let stand for at least one hour.
  • Bake in oven (150 C-160C) or (300-325 degrees Fahrenheit) uncovered for approximately 1 hour or until chops are tender.
  • I serve this with rice and steamed veggies.

2 bone-in pork loin chops (3/4 inch thick)
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided

1 medium sweet onion, sliced and separated into rings
1 medium Golden Delicious apple, cut into 1/4-inch slices
1/4 cup sugar
1/4 cup cider vinegar

Steps:

  • Cook pierogi according to package directions. Meanwhile, sprinkle pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, cook chops in 2 tablespoons butter over medium heat until juices run clear; remove and keep warm. , In the same skillet, saute onion in remaining butter for 3 minutes. Add apple; saute until almost tender. Stir in the sugar, vinegar, and remaining salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain pierogi. Add pork chops and pierogi to skillet; stir to coat.

salt and pepper to taste
1 cup uncooked wild rice
1 ½ cups water
1 (8 ounce) can canned mushrooms
1 tablespoon chicken bouillon granules
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a skillet with a small amount of oil, brown the chops seasoned with salt and pepper. Spray a large 9x13 inch casserole dish with nonstick spray. Sprinkle the washed rice evenly in bottom of dish.

1 teaspoon poultry seasoning

1 tablespoon butter
1 large yellow onion, sliced

1 ½ cups chicken broth
¼ cup buttermilk
¼ cup water

Steps:

1 tablespoon olive oil
1 teaspoon yellow mustard
1 tablespoon brown sugar
1 teaspoon ground paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Prep: Heat oven to 400°F and line a rimmed baking sheet with baking parchment.
  • Tenderize: Place pork chops between two pieces of plastic wrap and very gently pound using a rolling pin or flat side of a meat mallet (you don't want to flatten them much, you mainly want to tenderize them - 4-5 gentle smacks will do).
