1 1/2 cups flour
1 1/2 cups sugar
1 cup butter, Softened
2 eggs, Beaten
2 cups raw cranberries, left whole
1 cup pecans, Chopped

  • Preheat oven to 325 degrees.

¾ cup butter or margarine

2 cups cranberry sauce

3/4 cup cold water
1 can (14 oz.) whole berry cranberry sauce
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup powdered sugar
1-1/2 cups (about 1/2 of 8-oz. tub) thawed COOL WHIP Whipped Topping
1/2 cup chopped pecans, toasted

Steps:

  • Drain pineapple, reserving juice in 1-cup measuring cup. Add enough water to reserved juice to measure 1 cup; pour into small saucepan. Reserve drained fruit for later use.
  • Bring pineapple juice to boil. Add to gelatin mixes in medium bowl; stir 3 min. until completely dissolved. Stir in cold water. Add cranberry sauce and reserved pineapple; mix well.

2 cups cranberries, fresh or frozen
2 cups shredded sweetened coconut
4 large eggs
2 cups granulated sugar
1/2 cup lemon juice, freshly squeezed
1/4 cup all-purpose flour
1 teaspoon baking powder

Steps:

  • BASE Preheat oven to 325 F.
  • Butter a 13" x 9" oven-proof baking dish.
  • In a food processor or blender, pulse flour, sugar, salt and butter and whirl until crumbly.
  • Spread into prepared baking dish and pat down lightly.
  • Bake uncovered in preheated 325 F oven for 20 minutes.
  • Scatter cranberries over warm baked base.
  • Sprinkle over with shredded coconut.

12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup frozen concentrated orange juice
1/2 cup cold water
1/2 cup granulated sugar
3/4 cup pineapple-orange marmalade
3 inches cinnamon sticks
1/4 teaspoon freshly grated nutmeg
1 tablespoon lemon zest
2 teaspoons orange zest

Steps:

  • Wash the cranberries thoroughly in cold water. If using frozen cranberries, thaw first.
  • In a medium size saucepan, add cranberries, orange juice, water, sugar, orange-pineapple marmalade, cinnamon stick, nutmeg, lemon zest and orange zest.
  • Bring mixture to boil.
  • Reduce heat and simmer for about 10 minutes or until most of the cranberries pop, stirring occasionally.
  • When cooked, discard cinnamon stick.
  • Let cool and then store in a glass container with lid or a dish covered with plastic wrap.

1 (12 ounce) package fresh cranberries
1 large granny smith apple, peeled, cored and cut into chunks
1/2 large sweet red pepper, seeded and cut into chunks
1/2 medium red onion, cut into chunks
3/4 cup granulated sugar
1/3 cup apple juice
3 tablespoons chopped fresh cilantro
2 tablespoons chopped pickled jalapeno peppers or 2 tablespoons use 1 medium fresh jalapenos
1 teaspoon grated lime zest
1 (14 ounce) package spinach tortillas

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
  • Add this mixture to the cranberry mixture and mix well to blend.
  • Spoon into jars with a cover and refrigerate.
  • To prepare Tortillas:.
  • Heat oven to 375°F.

  • You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.

  • Frozen cranberries can also be used to make the salsa.
