1 (15 ounce) can solid pack pumpkin

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 18 to 20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Beginner and experienced chefs can all appreciate the ease of this recipe, plus they sell quickly at bake sales, and children love them.

1 (18 1/4 ounce) box spice cake mix
1 (15 ounce) can solid-pack pumpkin (the small can)
1 cup chopped pecans (optional) or 1/2 cup raisins (optional)
1 cup cream cheese frosting (optional)

Steps:

  • Preheat oven to 350°F.
  • Spray cookie sheets lightly with vegetable spray (Pam).
  • In a large bowl, mix together the cake mix and pumpkin with a fork or mixer until well blended; stir in nuts or raisins, if desired.
  • Drop by large rounded spoonfuls onto the cookie sheet; they don't flatten out much so however you place them on the sheet is pretty much how they'll look after baking.
  • Bake for 8 to 15 minutes, depending on the size of your cookies.
  • Allow cookies to cool on baking sheet for up to 5 minutes before removing to a wire rack to cool completely.
  • Frost, if desired.
  • How many cookies you get depends on how large you make them of course - just increase your baking time if making larger cookies (it's truly difficult to burn these, but they will get crispier & less moist); Mine, made with a medium size cookie scoop, take 13-15 minutes to bake and yield about 3 dozen.

1 (15 ounce) can pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup confectioners' sugar
1 tablespoon milk
1/2 tablespoon vanilla extract

Steps:

  • Mix cake mix, pumpkin puree, and seasonings until well blended.
  • Drop by spoonfuls onto an ungreased cookie sheet, flattening slightly.
  • Bake at 350° for 25 minutes.
  • Let cool for 5 minutes, then remove to a baking rack to finish cooling.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup packed light brown sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (see Cook's Note)
1 tablespoon plus 1 teaspoon pumpkin spice mix
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup granulated sugar

Steps:

  • Place the butter and brown sugar in a stand mixer fitted with a paddle attachment. Beat until fluffy, about 2 minutes. Add in the egg and vanilla. Beat until just combined.
  • Whisk together the flour, 1 tablespoon of the pumpkin spice mix, the baking powder and salt in a large bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining half of the dry ingredients until a thick dough comes together. Chill for at least 1 hour or overnight.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
