Tips:

  • Use buttermilk: Buttermilk reacts with baking soda to create bubbles, which makes pancakes light and fluffy. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will develop the gluten in the flour, which will make the pancakes tough. Mix the batter just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking allows the gluten to relax, which will make the pancakes more tender.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat will help them cook evenly without burning.
  • Flip the pancakes only once: Flipping the pancakes too often will make them tough. Flip them only once, when the edges are dry and bubbles are forming on the surface.
  • Serve the pancakes immediately: Pancakes are best served immediately after they are cooked. If you need to keep them warm, wrap them in foil or place them in a warm oven.

Conclusion:

Making melt-in-your-mouth pancakes is easy if you follow a few simple tips. Use buttermilk, don't overmix the batter, let the batter rest, cook the pancakes over medium heat, flip them only once, and serve them immediately. With a little practice, you'll be able to make perfect pancakes every time.
