Provided by Kimberly Killebrew

Categories     Side Dish

Time 1h

Number Of Ingredients 14

3 slices thick-cut bacon (, diced)
1/2 cup finely chopped yellow onion
2 cloves garlic (, minced)
12 ounces fresh button or cremini mushrooms (, chopped)
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup half-and-half
1 cup chicken broth
1/2 cup shredded white cheddar cheese
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound fresh green beans (, trimmed, halved, and blanched (boil 5 minutes, place beans in ice water for a couple of minutes, drain))
1 can quality French fried onions
or gluten free French fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • Fry the bacon in a large skillet over medium-high heat until crispy. Add the onions and cook until soft and translucent, about 4-5 minutes. Add the mushrooms and garlic and cook for another 4-5 minutes until the mushrooms are soft. Transfer the mixture to a bowl.
  • Melt the butter in the same skillet and whisk in the flour. Once combined, continue whisking for another 2 minutes until the mixture has slightly deepened in color. Add the half-and-half and chicken broth while constantly whisking to prevent lumps. Once slightly thickened, add the cheese and whisk until melted and combined.
  • Next add the mushroom/bacon mixture along with the salt and pepper. Let the sauce simmer for a couple of minutes, then add the green beans. Stir to combine.
  • Pour the bean mixture into a 9x13 casserole dish and sprinkle the French fried onions all over the top. Bake uncovered for 30 minutes until bubbling and the onions are golden and crispy. Let sit for 5 minutes before serving.

ABSOLUTELY DELICIOUS GREEN BEAN CASSEROLE FROM SCRATCH

Absolutely Delicious Green Bean Casserole from Scratch image

No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

Time 35m

Yield 6

Number Of Ingredients 13

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
½ teaspoon lemon zest
½ teaspoon salt
1 pinch ground black pepper
½ cup milk
1 cup sour cream
½ cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

ULTIMATE GREEN BEAN CASSEROLE

Ultimate Green Bean Casserole image

My Granny used to make this for every holiday, now my Mom does too! When I was younger I used to throw a fit if my Momma didn't make it! I get such a craving for this I could eat the whole pan. I like to think of this as more of an "Adult" version of the simple Campbell's and French's we're all used too. I sometimes like to add a dash of the paprika to the cream cheese soup mixture just for a little extra flavor. Enjoy!

Provided by Lalalauren

Categories     Vegetable

Time 1h5m

Yield 2 quart casserole, 8 serving(s)

Number Of Ingredients 12

3 (9 ounce) packages frozen French style green beans
3 tablespoons butter or 3 tablespoons margarine
1 (10 ounce) can cream of mushroom soup, undiluted
1 (3 ounce) package cream cheese, softened
1 small onion, finely chopped (somewhere between a 1/4 to 1/3c, however much onion flavor you like)
1 tablespoon flour
1 (8 ounce) can sliced water chestnuts, drained
1/4 teaspoon garlic salt (you can also use fresh garlic to taste and add to the onions)
1/4 teaspoon pepper
1 1/2 cups shredded cheddar cheese
1 (2 1/2 ounce) package slivered almonds
paprika

Steps:

  • Cook green beans according to package directions; drain.
  • Melt margarine in a Dutch oven over medium to medium low heat; add onion and cook until translucent.
  • Add flour and stir to coat.
  • Add soup and cream cheese. Cook over low heat, stirring constantly, until cream cheese is melted, add Cheddar cheese and stir until mixture is smooth and everything is melted.
  • Remove from heat; stir in green beans, water chestnuts, garlic salt, and pepper.
  • Spoon mixture into a lightly greased 2 quart casserole.
  • Top with almonds; sprinkle with paprika.
  • Bake, uncovered, at 375 deg. for 45 minutes.
  • *Remember when melting cheeses it is always better to do it low and slow then fast and hot! You want this smooth and creamy not curdled and lumpy!*.

Tips:

  • Use fresh green beans for the best flavor and texture. If using canned green beans, rinse and drain them well before using.
  • Don't overcook the green beans. They should be tender but still have a bit of a crunch.
  • Use a good quality cream of mushroom soup. A homemade cream of mushroom soup will give the casserole the best flavor, but you can also use a store-bought soup if you're short on time.
  • Add some extra flavor to the casserole by adding a cup of chopped onion, celery, or carrots.
  • Top the casserole with a crispy onion topping for a delicious crunch.
  • Serve the casserole hot, right out of the oven.
