SLOW-COOKER MASHED POTATOES

Slow-Cooker Mashed Potatoes image

The slow cooker takes an already-simple classic recipe and makes it even easier. Simply toss cut russet potatoes, butter and a touch of salt and pepper into a slow cooker, turn it on low and walk away for a few hours. When you return, the potatoes will be perfectly tender and ready to be mashed. Best of all, the slow cooker traps all the potato flavor, making these spuds extra potatoey.

Time 4h20m

Yield 8 servings

Number Of Ingredients 6

5 pounds medium russet potatoes, peeled and cut into 1-inch chunks
12 tablespoons (1 1/2 sticks) unsalted butter, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper
1 cup sour cream
1 1/2 to 2 cups milk, warm
2 tablespoons sliced chives

Steps:

  • Toss the potatoes, butter, 1 tablespoon salt and 1/2 teaspoon pepper together in a 6-quart slow cooker. Add 1 cup of water, then cover and cook on high until the potatoes are tender, about 4 hours. (The potatoes might have browned lightly in spots but that is okay.)
  • Remove the lid and add the sour cream and 1 1/2 cups warm milk to the potatoes. Use a potato masher to smash the potatoes until they are mostly smooth. If the potatoes need to be thinned out, stir in the remaining 1/2 cup warm milk. Season to taste with additional salt and pepper. Garnish with chives.

ULTIMATE CROCK POT MASHED POTATOES

Ultimate Crock Pot Mashed Potatoes image

I found this recipe on the Budget Savvy Diva site and it has been saving me tons of time (and stess) for the past few weeks! And like she said in the blog, the cream cheese makes all the difference. I can't wait to make this for our huge Thanksgiving dinner so I can focus on other recipes.

Categories     Mashed Potatoes

Time 5h15m

Yield 25 serving(s)

Number Of Ingredients 9

5 lbs russet potatoes (I have used Yukon Gold, also)
1 1/2 cups chicken broth
1/4 cup butter, cut into small cubes
1 1/4 cups light sour cream
1 garlic clove, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup milk, warmed
2 ounces light cream cheese

Steps:

  • Peel potatoes and cube. She stated that she likes to get 12 cubes per potato. You can do this if using Russets but not if using Yukons. Each cube should be about 1-1 1/2 inches.
  • Place potato cubes, butter and chicken broth into slow cooker and set to High.
  • Cover and cook for 4 1/2 hours.
  • Mash roughly in crock pot and add garlic, sour cream, salt, pepper, milk, and cream cheese and finish mashing.

Tips:

  • Start with the right potatoes: Yukon Gold or Russet potatoes are perfect for mashed potatoes.
  • Boil potatoes correctly: Place potatoes in a large pot and cover them with cold water. Bring the water to a boil, reduce heat to medium-low, and simmer until the potatoes are tender (25-30 minutes).
  • Don't overcook the potatoes: Overcooked potatoes will become gummy.
  • Drain the potatoes well: Use a colander to drain the potatoes and shake off any excess water.
  • Mash the potatoes immediately: Mash the potatoes while they are still hot to create a smooth and creamy texture.
  • Use a potato ricer: A potato ricer produces the smoothest mashed potatoes.
  • Use good quality butter: Butter adds richness and flavor to mashed potatoes.
  • Don't skimp on the milk: Milk helps to make mashed potatoes creamy and smooth.
  • Season to taste: Salt and pepper are the essential seasonings for mashed potatoes, but feel free to add other herbs and spices, such as garlic powder, onion powder, or chives.
  • Serve mashed potatoes immediately: Mashed potatoes are best served hot.

Conclusion:

The tips provided above will allow you to create the perfect pot of mashed potatoes every time. Whether you're serving them as a side dish or a main course, mashed potatoes are sure to be a hit. So next time you're looking for a delicious and comforting dish, reach for your slow cooker and make a batch of mashed potatoes.
