2 tbsp of butter
2 chicken breast (cut into bite size cubes)
2 cups elbow macaroni
2 cups chicken stock
1 cup milk
1 cup cheddar (grated)
½ cup mozzarella (grated)
½ cup parmesan cheese (grated)
1 tsp. mustard
1 garlic clove (minced)
1 pinch of nutmeg

Steps:

  • Heat 1 tsp of the butter in a pot or a large skillet over high-medium heat
  • Add salt and pepper to the chicken and put the chicken into the pot
  • Cook for around 5-7 minutes until slightly brown and cooked through
  • Remove the meat from the pot.
  • Add the second tsp of butter and the garlic and cook for 1-2 minutes

1 rotisserie-roasted chicken
6 tablespoons butter

1 lb shell pasta
3 cups rotisserie-cooked chicken, cubed
1/2 lb mozzarella cheese, 1/4 inch cubes
2 cups cheddar cheese, shredded
2 cups milk
5 tablespoons butter, divided
3 tablespoons flour
1/4 cup Italian seasoned breadcrumbs
1 tablespoon parmesan cheese
1 teaspoon garlic, fresh minced
salt
pepper, and
garlic powder, to taste

Steps:

  • Preheat the oven to 350. Grease an 8x11.5 with cooking spray.
  • Cook pasta until al-dente.
  • Chop chicken and cube the mozzarella, put to the side.
  • In a medium sauce pan, melt 3 Tbutter. Once the butter is melted, add the flour and combine, add the milk, salt, pepper and garlic powder. Add the shredded cheese once the milk comes to a simmer. Turn heat off once cheese is melted.
