4 bacon slices, cut into 3-inch strips
4 pounds beef chuck or round, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
3 tablespoons all-purpose flour
1 cup Cognac
1 bottle dry red wine, such as Burgundy
5 cups low-sodium beef broth
Bouquet garni (2 fresh rosemary sprigs, 8 fresh thyme sprigs, 2 bay leaves, tied together with kitchen twine or tied in cheesecloth)
3 garlic cloves, chopped
1 pound white mushrooms, stems trimmed
3 cups blanched and peeled pearl onions
Pinch sugar
Fresh flat-leaf parsley, chopped, for garnish

Steps:

  • Put a large Dutch oven over medium heat and drizzle in a 1/2-count of oil. Add the bacon and cook until crisp. Remove it to a paper towel; crumble when cool and set aside to use for the garnish. Season the beef with a generous amount of salt and pepper. Add the beef to the pot in batches. Fry the cubes in the bacon fat until evenly browned on all sides, about 8 to 10 minutes.   • Uncover the pot and add the mushroom mixture along with the pinch of sugar to balance out the acid from the red wine. Season with salt and pepper, to taste. Turn the heat up slightly and simmer for 45 minutes longer, until the vegetables and meat are tender. Remove the bouquet garni. 4 pounds short ribs, in 1 long piece or at least in pairs
Kosher salt and freshly ground black pepper
1 medium onion, chopped
2 carrots, chopped
1 large tomato, quartered
3 ribs celery
1/2 head garlic, peeled
1/4 bunch fresh thyme
1 1/2 cups dry red wine
2 cups low-sodium, organic beef stock
4 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat a cast iron grill or outdoor grill.
  • Season the short ribs with salt and pepper, drizzle with a little extra-virgin olive oil, and brown on all sides.
  • Place the onion, garlic, celery, carrot, and tomato into a food processor and blend until you reach a consistent, smooth pulp.
  • Take a large Dutch oven and place over medium-high heat. Add a 3-count of extra-virgin olive oil and add the thyme to infuse the oil. 1/2 pound baby carrots
1/2 pound garden peas

2 cups all-purpose flour
2 -3 lbs boneless beef chuck shoulder pot roast, cut into 2-inch pieces (this cut is also called chuck shoulder pot roast and chuck roast boneless)

fresh ground black pepper
750 ml dry red wine (recommend a Burgundy)
8 sprigs fresh thyme
6 garlic cloves, smashed
3 slices orange zest, 1-inch each
1/4 teaspoon ground cloves
2 bay leaves
2 1/2 cups beef stock
9 small new potatoes, scrubbed clean and cut in half
1/2 lb carrot, peeled and sliced

6 fresh medium corn tortillas

3 cups finely shredded white cabbage
1/4 bunch fresh cilantro leaves
1 (28 ounce) can whole tomatoes, drained, reserving the juice (recommended ( San Marzano)
1 small red onion, roughly chopped
1 serrano chili
1 garlic clove, roughly chopped

Steps:

  • Season all sides of the beef with a fair amount of salt and pepper. In a large Dutch oven, or other heavy pot that has a tight cover, heat 2 tablespoons of olive oil over moderately high heat. Add the garlic and the beef to the pot, browning the meat on all sides, taking the time to get a nice crust on the outside. Add the onion and allow to lightly brown, about 3 to 4 minutes. Add the crushed tomatoes, plus 1 tomato can of water, spices, season with salt and pepper, to taste, and add enough water to cover the meat. Bring to a boil then reduce heat and simmer with a lid for 3 hours until the meat is fork tender. Let meat cool in the liquid. Shred meat and set aside.

4 slices firm white bread, crust removed

4 cups good quality jarred tomato sauce
1/2 lb mozzarella cheese, cut into chunks

Steps:

  • Bring a big pot of salted water to a boil for the spaghetti. Heat 3 tablespoons oil in an ovenproof skillet over medium heat. Add the onion, garlic, and parsley and cook until the vegetables are soft but still translucent, about 10 minutes. Take the pan off the heat and let cool.
  • Pour enough milk over the bread in a bowl to moisten and let it soak while the onions are cooling. Combine the meats in a large bowl. 4 garlic cloves, roughly chopped
1/4 cup kosher salt
1 teaspoon fresh ground black pepper
1 tablespoon extra virgin olive oil
1 sprig fresh rosemary, leaves removed
1 sprig fresh thyme, leaves removed
3 lbs beef short ribs, cut into 2 ribs apiece
1 1/2 lbs cremini mushrooms, sliced
1 1/2 lbs white button mushrooms, sliced
1/2 cup chopped shallot, sliced thin
2 garlic cloves, minced
1/4 cup cognac
2 cups heavy whipping cream
1 tablespoon Dijon mustard
1/2 cup sour cream
1 lb egg noodles
3 tablespoons unsalted butter
2 tablespoons freshly chopped flat leaf parsley
2 tablespoons freshly chopped green onions

Steps:

  • Preheat oven to 300°F.
  • Combine 4 cloves roughly chopped garlic with salt, pepper and olive oil. Add rosemary leaves and thyme leaves. Smear around the bowl and squeeze in your fist to bruise and combine. Smear this paste all over the short ribs on a baking sheet. Place sheet in oven and roast 2 1/2 hours, until the meat is falling off the bone.
  • Heat 2 T olive oil over medium-high heat in a large skillet. Add mushrooms and sear 3-5 minutes until browned. Add shallots and garlic; cook until garlic is fragrant, 1-2 minutes. Season with salt and pepper. Move pan away from open flame and add cognac to deglaze; return pan to heat and scrape any browned bits off the bottom of the pan. Add heavy cream. Bring to a boil, reduce to a simmer and cook until reduced by half. Turn off heat and add mustard and sour cream; stir well. Adjust seasoning with salt and pepper.
