Steps:
- Make the crust: Pulse the flour, sugar, lemon zest and salt in a food processor. Add the butter and pulse until the mixture looks like coarse meal. Add the egg yolk and 2 tablespoons ice water; pulse until the dough begins to come together. Turn out onto a sheet of plastic wrap and pat into a disk. Wrap tightly and refrigerate until firm, at least 1 hour and up to 1 day.
- Lightly coat a 9-inch tart pan with a removable bottom with cooking spray. Roll out the dough into a 10-inch round on a lightly floured surface. (If it gets too soft, return to the refrigerator until firm.) Ease the dough into the prepared pan and press into the bottom and up the sides, trimming any excess. Pierce the bottom all over with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Preheat the oven to 375 degrees F. Put the tart pan on a baking sheet. Line the crust with foil, then fill with pie weights or dried beans. Transfer the baking sheet to the oven; bake until the crust edges are golden, about 20 minutes. Remove the foil and weights and continue baking until the crust is golden all over, 15 to 20 more minutes. Transfer to a rack and let cool completely. (The tart shell can be made up to 1 day ahead.)
- Meanwhile, make the filling: Whisk the sugar, egg yolks, cornstarch and salt in a bowl until combined. Heat the milk in a small saucepan over medium heat (do not boil). Gradually whisk half of the hot milk into the egg mixture, then pour back into the saucepan with the remaining milk and cook, whisking, until thick like pudding, about 4 minutes. Whisk in the butter and vanilla. Pour the filling through a fine-mesh sieve into a large bowl. Let cool to room temperature, stirring frequently, about 30 minutes.
- Beat the heavy cream with a mixer until soft peaks form. Gently fold the whipped cream and poppy seeds into the cooled filling. Spoon into the prepared crust and smooth the top. Cover loosely with plastic wrap and refrigerate until set, at least 3 hours or overnight.

UKRAINIAN-VIENNESE ORANGE TORTE
Steps:
- CAKE BATTER: Mix sugar, orange rind, and orange juice. Cook over low heat for several minutes, until thick. Let cool. Preheat oven to 325-350F degrees (see below). Beat egg yolks until light and fluffy, and add ground almonds and the above orange syrup to yolks gradually; mix well. Add breadcrumbs and mix. Whip egg whites well (until soft peaks form), and fold them thoroughly into above mixture. Butter and lightly breadcrumb two 25 cm. (10") round cake pans. (Use the spring-form type with removable sides.) Pour half the batter into each pan. Bake in pre-heated 350F oven until done, perhaps 30 minutes (or use 325F oven for up to 45 minutes). Let cool to room temperature, and remove from pans. FILLING/ICING: Mix milk, egg yolks, and flour together. Cook over double boiler (or very carefully over low heat, stirring constantly for the first five minutes and frequently thereafter--it burns easily, so do not walk away and leave it!) until mixture is like very thick cream. (This may take 30 to 40 minutes.) Let cool to room temperature (to speed up cooling, you can stir it). Mix butter and icing sugar together until light and fluffy. Combine the two above mixtures together with remaining filling ingredients. Mix well. ASSEMBLY: Take one of the cake layers and spread with 1/3 to ½ of the filling/icing mixture. Place second cake layer on top. Ice the cake (top and sides) with the remaining filling. (If wish, can decorate top with whole almonds.) Refrigerate. Wait a day or two before serving, to let the taste develop fully. It will keep well for at least a week, but may get a bit soggier over time.
UKRAINIAN PRUNE TORTE
Great-Grandma used prunes and prune fillings in many goodies of her own creation. Prune torte is one of them. The filling is even more delicious when made with an equal quantity of dates and prunes.

ORIGINAL PLUM TORTE
The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

UKRAINIAN KYIVSKY TORTE
Most tortes are compact and flat as compared to the modern high and fluffy cakes. Eggs add lightness to them and, in place of flour, ground nuts or bread crumbs are used as a thickening. Most of the Ukrainian tortes are rich, and the richer the better, since no one is calorie-conscious in Ukraine. The Kyivsky torte consists of layers of sponge cake containing ground hazelnuts or walnuts separated by buttercream filling.

Steps:
- Beat the 12 egg Yolks until light and beat in the sugar gradually (a tablespoon at a time).
- Beat until lemon colored, light and fluffy.
- Fold in the bread crumbs and the nuts.
- Beat the 12 egg whites until stiff.
- Lighten the nut mixture with a bit of the egg whites and then genly fold into the mixture the rest of the whites.
- Butter 2 deep layer pans 9 or 10 inch springform pans (shallow pans may cause the batter to run over in the oven) with soft butter and sprinkle with fine bread crumbs.
- Regular pans can be used, in this case use parchment paper for the bottom of pan and grease the paper also.
- Bake in a 325 F.
- oven for about 30--35 minutes.
- Test cake with a toothpick in the centre of the cake, if it comes out clean the cake is done.
- Cool for 10 minutes and gently with a knife go around the cake to loosen and gently invert and place on a cake rack.
- Fill and frost the cake with the filling.
- If you wish more layers cut each cake in half and fill so that you will have 4 layers.
- FOR THE BUTTERCREAM FILLING AND ICING: Over simmering water in a double boiler add 1 cup HOT strong coffee and add the chocolate, mixing well to melt.
- In a separate bowl-- Beat the 5 egg yolks until light and set aside.
- Blend 2 1/2 Tablespoons of the flour in the remaining 1/2 cup COLD coffee and blend well until smooth and free of any lumps.
- Add the flour mixture to the whipped egg yolks and mix well.
- Add this mixture whisking quickly to the melted chocolate (in the double boiler) and cook until thickens stirring frequently for about 10 minutes.
- When mixture has thickened set it aside to COOL.
- Beat 1 cup unsalted butter with the 1 cup of sugar until light and fluffy and gradually beat in the cold chocolate pudding mixture little at a time into the butter and beat until fluffy.
- Mise en Place: Before starting, ensure all ingredients are measured and ready. This will make the baking process smoother and more efficient.
- Use Fresh Ingredients: Fresh ingredients, especially oranges, will yield the best flavor in your torte. Look for ripe, juicy oranges for the best results.
- Zest and Juice the Oranges Properly: To get the most flavor from the oranges, zest them finely and juice them thoroughly. Use a citrus zester or a fine grater to get the zest, and a citrus juicer to extract the juice.
- Cream the Butter and Sugar Properly: Creaming the butter and sugar together until light and fluffy is essential for a successful torte. This process incorporates air into the mixture, resulting in a lighter and more delicate texture.
- Gradually Add the Eggs: Add the eggs one at a time, beating well after each addition. This will help prevent the mixture from curdling.
- Fold in the Flour Gently: Use a spatula to gently fold in the flour mixture until just combined. Overmixing can result in a tough torte.
- Bake Until a Toothpick Inserted into the Center Comes Out Clean: The baking time may vary depending on your oven, so keep an eye on the torte and check for doneness by inserting a toothpick into the center. When the toothpick comes out clean, the torte is done.
- Let the Torte Cool Completely: Allow the torte to cool completely before frosting it. This will help prevent the frosting from melting and running off the torte.
- Decorate to Your Liking: Once the torte is cooled, you can decorate it with the orange glaze and candied orange peel as desired. You can also add additional decorations such as whipped cream, fresh fruit, or sprinkles.
