Provided by Ree Drummond : Food Network

Categories     dessert

Time 20m

Yield 12 servings

Number Of Ingredients 14

1 baked quarter sheet Chocolate Sheet Cake, recipe follows, or 1 box cake mix, baked in a sheet pan
Three 16-ounce containers vanilla frosting
1 1/2 teaspoons green gel food coloring
Candy cake decorations of your choice, for decorating
Mixed holiday candies, for decorating
2 cups all-purpose flour
2 cups sugar
1/4 teaspoon salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
2 sticks (1 cup) salted butter
4 heaping tablespoons cocoa powder

Steps:

  • Remove the cake from the pan and place bottom-side up on a platter.
  • Put 1 container of plain frosting in a piping bag with an X-shaped nozzle or in a resealable bag with the bottom corner snipped. Add green coloring to each of the other 2 containers of frosting and mix until they are a consistent green.
  • Using an offset spatula, spread the green frosting evenly over the top and sides of the cake. Pipe the plain frosting in a Y shape to make it look like a sweater V-neck and front fastening. Decorate with cake decorations and holiday candies--use any design you like and make it your own.
  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the flour, sugar and salt. Stir together and set aside.
  • In another bowl, mix the buttermilk, baking soda, vanilla and eggs. Mix with a fork and set aside.
  • In a medium saucepan, melt the butter and add the cocoa. Whisk together to combine. Meanwhile, bring 1 cup water to a boil. When the butter is melted, pour the boiling water in the pan. Allow to bubble for a moment, then turn off the heat.
  • Pour the chocolate mixture into the flour mixture. Stir together for a moment to cool the chocolate, then pour in the egg mixture. Stir together until smooth, then pour into a rimmed half sheet pan and bake until an inserted toothpick comes out clean, about 20 minutes. Let cool, then cut the finished cake in half so it is the size of a quarter sheet pan.

UGLY POUND CAKE

Ugly Pound Cake image

It is called Ugly Cake because this cake rises and then is supposed to drop! It looks ugly but tastes delicious! It is moist, rich, and dense!

Provided by Gwen Reisman

Categories     Cakes

Time 2h

Number Of Ingredients 6

3 stick butter
8 oz soft cream cheese
3 c sugar
1 1/2 tsp vanilla & / or mille fiore extract
3 c sifted presto cake flour
6 large eggs

Steps:

  • 1. Cream butter and cream cheese together. Add sugar and beat. Add vanilla on low. Alternate eggs and flour, pour into 10 inch greased tube pan and put in the middle of a COLD oven. Bake at 300 for 1.5 hours or until done.
  • 2. I have also added flaked coconut, pecans, dried cranberries for a variation. This cake is a very rich pound cake that is delicious. It is 'ugly' because first the cake rises ( do not overbeat it) then it drops at the end of the cooking time. It looks strange but is yummy. It doesn't come out looking the same each time. You must use the PRESTO CAKE FLOUR, any other it won't work correctly. It is a family favorite.

Like good cookbooks, name-brand cake mixes are made so well these days that there is little doubt they will bake and taste good if you follow the instructions carefully.

UGLY DUCKLING CAKE I

Ugly Duckling Cake I image

Yellow cake mix, canned fruit cocktail, coconut, and nuts blend in this recipe that may look a bit 'ugly,' but tastes great.

Provided by Glenda

  • Sprinkle with brown sugar and nuts. Bake at 325 degrees F (165 degrees C) for 45 minutes. Bring butter, sugar and milk to a boil. Boil 1 minute. Stir in 1/2 cup coconut. Spoon over warm cake. Top with prepared whipped topping, if desired.

Tips:

  • Choose the right pan: Use a 9x13 inch pan for the best results. A larger pan will make the cake too thin, and a smaller pan will make it too thick.
  • Don't overmix the batter: Overmixing the batter will make the cake tough. Mix the batter until the ingredients are just combined.
  • Bake the cake at the right temperature: The cake should be baked at 350 degrees Fahrenheit for 30-35 minutes. If the cake is baked at too high a temperature, it will brown too quickly and the inside will be undercooked.
  • Let the cake cool completely before frosting it: This will help the frosting to set properly.
  • Use a simple frosting: A simple frosting, such as a buttercream or cream cheese frosting, is the best choice for an ugly cake. A more elaborate frosting will just make the cake look messy.
  • Don't be afraid to get creative: The best ugly cakes are the ones that are unique and creative. Use your imagination and have fun with it!

Conclusion:

Ugly cakes are a fun and easy way to show your loved ones how much you care. They're perfect for birthdays, holidays, or any other special occasion. And best of all, they're delicious! So next time you're looking for a unique and creative way to show your love, make an ugly cake.
