Peanut Sauce Udon Noodles

Provided by Veganbell

Categories     Lunch

Time 20m

Number Of Ingredients 20

3.5 oz udon noodles ((100 gm.))
3 cups water
Salt
3 tablespoons peanut butter ((smooth or crunchy))
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon lemon juice
1 tablespoon maple syrup
1/2 teaspoon red chili flakes
Salt
Pepper
1 tablespoon olive oil
4 cloves garlic (chopped)
1 inch ginger (chopped)
1 cup shiitake mushrooms (sliced)
1 cup broccoli florets
2 tablespoons water
1/2 cup carrot (julienned)
1/4 cup green onions (chopped)
Sesame seeds (to garnish)

Steps:

  • Heat water in a large saucepan. Add salt. Once it starts to boil, add noodles. Give it a quick stir and boil for 9-12 minutes (or as instructed in the packaging).
  • Once it's boiled, turn off the heat and drain. Drizzle a bit of olive oil and gently mix using 2 forks. This prevents the noodles from sticking (and drying out) while we're preparing the rest of the ingredients.
  • In a mixing bowl, add all the peanut sauce ingredients. Stir and mix until smooth. If you're using crunchy peanut butter (like I have) you might have to stir it vigorously. Set aside.
  • Set a saute pan over medium heat. Add oil.
  • Once it's hot, add ginger + garlic and stir-saute until golden, around 1-2 minutes.
  • Add mushroom + broccoli and stir-saute for 1-2 minutes. Pour in 2 tablespoons of water. Cover the pan and let it cook for 2-3 minutes.
  • Add the boiled noodles + carrots + peanut sauce. Gently fold and mix until the noodles are completely coated with the sauce.
  • Garnish with green onions and sesame seeds. Serve hot or cold.

Tips:

  • Choose the right noodles: Udon noodles are thick and chewy, making them perfect for this dish. If you can't find udon noodles, you can substitute another type of thick noodle, such as ramen noodles or soba noodles.
  • Make sure the peanut butter is smooth: If your peanut butter is chunky, it will be difficult to mix into the sauce. If you only have chunky peanut butter, you can put it in a blender or food processor until it is smooth.
  • Adjust the amount of chili paste to your taste: This recipe calls for 1 tablespoon of chili paste, but you can add more or less depending on how spicy you like your food.
  • Garnish with your favorite toppings: This dish is delicious with a variety of toppings, such as chopped peanuts, cilantro, green onions, or sesame seeds.

Conclusion:

This udon peanut butter noodle dish is a quick and easy weeknight meal that is sure to please the whole family. The peanut butter sauce is creamy and flavorful, and the noodles are cooked to perfection. With a few simple ingredients, you can create a delicious and satisfying meal that everyone will love.
