- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the orange juice, water, orange peel and almond extract. Combine the flour, baking powder and salt; add to creamed mixture and mix well. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. - 1. Heat oven to 350^. Spray the bottom only of a 9x13 inch glass baking dish;set aside. Empty orange sliced in small bowl;and using kitchen scissors cut up the orange slices.
- 2. Empty the cake mix into a medium glass bowl. Next empty the cut up orange pieces and all the juice in with the dry cake mix(it will foam a bit-that's good). Stir with a spatula to get all the cake mix incorporated;Scooping from bottom to top: if desired add 1 teaspoon of your favorite extract(I used rum extract)
- 3. Pour mixture into the prepared pan. Bake for 30 minutes then place on cooling rack..delicious with a scoop of ice cream or whipped topping.
Tips:
- Use a citrus zester to get the most zest from your oranges. This will give your cake a more intense orange flavor.
- If you don't have a citrus zester, you can use a grater. Just be sure to use the smallest holes on the grater so that you don't get any of the bitter white pith.
- Be sure to use fresh oranges. This will give your cake the best flavor.
- If you only have access to store-bought orange juice, be sure to use 100% orange juice with no added sugar.
