BEST TWO-EGG CAKE
This is a very simple cake. I made it for my Dad when he came to visit, and he said it smelled like pancakes. I got this out of the 1953 Better Homes And Gardens New Cookbook.

Tips:
- Room Temperature Ingredients: Ensure that your eggs, milk, and butter are at room temperature before beginning. This helps them combine more easily and results in a smoother batter.
- Do Not Overmix the Batter: Overmixing can lead to a tough, dense cake. Mix only until the ingredients are well combined, without overbeating.
- Use Fresh Baking Powder: Baking powder loses its potency over time, so make sure yours is fresh for the best rise.
- Properly Grease and Flour the Pan: This prevents the cake from sticking and ensures an even bake.
- Oven Temperature: Accurately preheat your oven to the specified temperature and avoid opening the oven door during baking to prevent the cake from sinking.
- Toothpick Test: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it has batter attached, continue baking for a few more minutes.
- Cooling the Cake: Allow the cake to cool completely in the pan before frosting or serving. This helps it set properly and prevents it from crumbling.
