Tips:

  • Use a variety of winter squash for a more flavorful casserole. Butternut, acorn, and kabocha squash are all great options.
  • Make sure to peel and cube the squash before cooking it. This will help it cook evenly.
  • To save time, you can cook the squash in the microwave. Place the cubed squash in a microwave-safe bowl with a little water and cook on high for 5-7 minutes, or until the squash is tender.
  • Don't overcook the squash. It should be tender, but still hold its shape.
  • Use a combination of cheeses for a more flavorful casserole. Cheddar, Parmesan, and Gruyère are all good choices.
  • If you don't have any bread crumbs, you can use crushed crackers or tortilla chips instead.
  • Top the casserole with additional cheese before baking it. This will help it get golden brown and bubbly.
  • Serve the casserole hot with a side of salad or roasted vegetables.

Two-cheese squash casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover squash. With its creamy cheese sauce, tender squash, and crispy bread crumb topping, this casserole is sure to be a hit with your family and friends.
