Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Tips:
- Use high-quality tuna for the best flavor. Choose tuna that is packed in water or olive oil, not brine.
- Flake the tuna well before mixing it with the other ingredients. This will help to ensure that the tuna is evenly distributed throughout the mixture.
- Use a good quality cheese that melts well. Cheddar, mozzarella, and Gruyère are all good choices.
- If you are using canned tuna, be sure to drain it well before adding it to the mixture.
- You can use any type of bread for these sandwiches, but a sturdy bread that will hold up well to the filling is best. Whole wheat bread, sourdough bread, and multigrain bread are all good choices.
- Butter the bread before grilling it to help it brown and crisp.
