TWIN MOUNTAIN MUFFINS

This is a basic muffin recipe that my mother used to make for us. I believe she got it from one of her old cookbooks, although I'm not sure. It's an easy recipe that is good for beginning bakers. It can be made less sweet to accompany savory meals (mom often served them with chili), or it can be made sweeter and fruit, such as blueberries, or other flavorings added to them. You can also adjust the amount of egg used. I like to make them with both eggs and about 2-4 T sugar.

Tips:

  • Muffin Pan Preparation: Ensure your muffin pan is well-greased or lined with paper cups to prevent sticking and ensure easy muffin removal.
  • Muffins Batter Consistency: The batter should be thick and pourable. If it's too thick, add a bit of milk; if it's too thin, add a bit more flour.
  • Mixing the Batter: Avoid over-mixing the batter, as this can result in tough muffins. Mix just until the ingredients are combined.
  • Filling the Muffin Cups: Fill each muffin cup about 2/3 full to allow for rising during baking.
  • Muffin Baking Time: Muffins are typically done baking when a toothpick inserted into the center comes out clean. However, baking time may vary depending on the oven, so keep an eye on them.
