Twice Smoked Spiral Ham image

A sweet honey glaze on this smoked ham is so juicy and full of flavor. It will be come the new favorite holiday recipe for Thanksgiving, Christmas and Easter.

8-10 lb smoked spiral ham
2 1/4 c. ginger ale
1 c. brown sugar (packed)
3 Tbsp honey
4 1/2 tsp apple cider vinegar
2 garlic cloves (minced)
1 1/2 tsp Dijon mustard

Steps:

  • In a small saucepan, combine the ginger ale, brown sugar, mustard, honey and apple cider vinegar. Bring to a boil. Cook until glaze is reduced by half, about 15 minutes. Stir in remaining ingredients; cook 5 minutes longer. Remove from heat.
  • Remove all of the netting and wrapping from the ham and lay the ham in a large foil pan. Pull the slices apart one by one and drizzle honey glaze down in between the pieces. You will want to hold the front so the slices do not fall all the way over and tear. After that brush the top of the ham with glaze.
  • Prep your smoker according to manufacture's directions. We used cherry wood pellets in our Traeger electric smoker. Set your smoker for cooking at about 230 - 240 degrees F. Place the pan with the spiral cut ham on the smoker and close lid. Baste the ham every hour with more of the glaze.
  • The smoking process will take 3 hours. This is a double smoked ham so the ham is already cooked, this process adds more smoke flavor and the glaze.

1 8 pound spiral sliced ham
1 cup chicken stock
1 cup dark brown sugar
1/4 cup honey
1 Tablespoon dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground cloves
1 Tablespoon Signature Sweet Rub

Steps:

  • Preheat your smoker to 225 degrees f.
  • Place the ham, cut side down, directly on the grill grates.
  • Close the lid and smoke the ham for 1.5 hours.
  • Place the ham in a large 12 inch cast iron skillet. Pour 1 cup of chicken stock over the ham and then cover the ham and the top of the pan tightly with aluminum foil. Close the lid, increase the temperature on your smoker to 300 degrees F and continue cooking for an additional 2 hours, or until the internal temperature reads 140 degrees F.
  • When the ham is almost done cooking, prepare the glaze. In a small saucepan, combine all of the glaze ingredients. Cook over medium heat, stirring frequently with a whisk, just until the glaze comes to a boil. Remove from the heat immediately.
  • Remove the ham from the smoker and open up the foil. Drain off any excess cooking liquid and set aside for serving. Turn the ham over onto it's side and brush liberally with the brown sugar honey glaze.
  • Place the glazed ham into your oven on High broil. Cook for 2-3 minutes, or until the glaze is bubbling and caramelized.
  • Serve immediately with the drippings from the cast iron skillet on the side, if desired.
