TWICE-COOKED POTATOES WITH CAVIAR

Twice-Cooked Potatoes with Caviar image

A gathering becomes instantly festive when you offer these delicate hors d'oeuvres topped with caviar.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes 2 dozen

Number Of Ingredients 7

28 baby red potatoes (about 2 pounds)
2/3 cup whole milk
1 tablespoon unsalted butter, room temperature, plus 2 tablespoons, melted
1/4 cup creme fraiche
Kosher salt and freshly ground pepper
1 tablespoon finely chopped fresh chives
3 ounces caviar, preferably American paddlefish

Steps:

  • Place potatoes in a large saucepan, and cover with cold water. Bring to a boil; reduce to a simmer, and cook until just tender when pierced with the tip of a sharp knife, about 15 minutes. Drain well. Transfer to a rimmed baking sheet, and let stand until cool enough to handle.
  • Cut off tops and a thin slice from bottoms of 24 potatoes. Using a small melon baller, scoop out flesh from these potatoes, leaving a 1/4-inch-thick shell. Peel remaining 4 potatoes. Press whole potatoes and remaining flesh through a ricer into a medium bowl.
  • Preheat oven to 375 degrees. Heat milk and the room-temperature butter in a small saucepan over medium until butter melts. Stir into riced potatoes, a little at a time, until creamy. Stir in creme fraiche and the chives; season with salt and pepper.
  • Transfer to a pastry bag fitted with a 1/2-inch plain round tip (such as Ateco #806). Pipe potato mixture into shells, mounding about 1/2 inch above top edge.
  • Bake until tops are golden brown and slightly puffed, about 15 minutes. Brush with melted butter, and bake 15 minutes more. Top each potato with about 1/4 teaspoon caviar. Serve immediately.

TWICE BAKED OUTDOOR BBQ BABY POTATOES

Twice Baked Outdoor BBQ Baby Potatoes image

This is how we cook our leftover baby spuds, when we have any leftovers that is! Therefore, I often find myself cooking up a pan of these potatoes, in order for them to be grilled or baked on the BBQ! Quantities given are assuming that there will be other accompaniments - please feel free to increase or decrease the amounts listed. Split them open once baked/grilled and spread with butter and a good twist of sea salt plus some ground black pepper - no other embellishments are needed for these delicious potatoes! When the potatoes are VERY baby in size, I cook these in an old cast iron pan which is used just for the BBQ - they still come out smoky and delectable!

Time 40m

Yield 4 serving(s)

Number Of Ingredients 4

2 lbs baby potatoes, pre-cooked
butter
sea salt
fresh ground black pepper

Steps:

  • If you need to par-boil these potatoes first, place them in a large pan of boiling water and cook for about 5 to 8 minutes. Do NOT peel them, but scrub them if necessary and cut any protruding eyes out.
  • Drain them well and place them straight on to the BBQ grill/shelf, moving them around all the time with heatproof tongs.
  • Or, if they are too small and might fall through the grill, put them in an old frying pan, skillet or cast iron container with a knob of butter, and cook them over the direct heat, again moving them around so they don't over colour in one area.
  • I have also placed these potatoes in a double wrapping of tin foil, with a knob of butter and cooked them in the embers of a BBQ - turning them around regularly for about 30 to 45 minutes. (You can also do them this way when you have a wood fire burning in your home during the winter months.).
  • Bake them for about 20 to 30 minutes until the skins are well coloured and slightly crispy, and then serve them piping hot with butter and sea salt and black pepper.

CRISPY TWICE COOKED NEW POTATOES WITH GARLIC AIOLI

Crispy Twice Cooked New Potatoes with Garlic Aioli image

Provided by Tyler Florence

Categories     side-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 17

20 to 30 small new potatoes
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper
Vegetable oil, for deep-frying
2 heads garlic
Extra-virgin olive oil
1 sprig thyme
1 tablespoon water
Kosher salt
Freshly ground black pepper
*1 jumbo egg yolk
1 lemon, juiced
Salt and pepper
1/2 cup extra-virgin olive oil
1/4 cup sour cream
Chopped chives, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • Lay potatoes out in a single layer on a sheet pan. Drizzle with olive oil and season with salt and pepper. Toss the potatoes around so they are evenly coated and pop in the oven to roast for 35 to 40 minutes until tender.
  • Cut a heads of garlic through the middle, horizontally, and put in a foil pouch with olive oil, thyme, water, and salt and pepper. Seal the pouch around the edges and roast in the oven with the potatoes - this will be used for the aioli.
  • When the potatoes are done and warm enough to handle make an X cut on 1 side of the potato and then squeeze gently from the bottom to form a flower-like shape. Heat a pot of oil for deep frying to 350 degrees F and fry the potatoes until crispy and golden. Drain on paper towels and season with kosher salt.
  • Remove the garlic from the pouch and squeeze out the flesh. Add the roasted garlic, egg, lemon juice, salt and pepper in a blender and process. Pour in the olive oil in a slow, steady stream until the aioli emulsifies. Fold in sour cream and adjust seasoning with salt and pepper. Garnish with chives.

MINI TWICE-BAKED POTATOES

Mini Twice-Baked Potatoes image

Provided by Giada De Laurentiis

Categories     side-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds medium Yukon gold potatoes (12 to 14 potatoes)
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
6 ounces bacon, chopped fine
1/3 cup panko breadcrumbs
1/4 cup chopped fresh chives
1/4 cup freshly grated Parmesan, plus 2 tablespoons
1/4 cup sour cream, at room temperature
2 tablespoons unsalted butter, melted
1 tablespoon heavy cream, at room temperature

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the potatoes on a rimmed baking sheet and toss with the olive oil and sprinkle with 3/4 teaspoon salt. Bake until a knife inserted into the potatoes goes in with little to no resistance, about 1 hour. Allow to cool slightly.
  • In a medium skillet, cook the bacon over medium-low heat until the fat is rendered and the bacon is crispy, about 10 minutes. Drain well and place half of the bacon into a bowl. Add the panko, 2 tablespoons chives and 2 tablespoons Parmesan. Mix to combine and set aside.
  • In another bowl, combine the sour cream, butter, heavy cream, the remaining bacon, 1/4 cup Parmesan, 2 tablespoons chives and 1/4 teaspoon salt. Set aside.
  • When the potatoes are cool enough to handle but still warm, cut off the top third of each potato. Remove the skin from the tops. Using a 1 teaspoon measure or a melon baller, scoop out some of the insides of the cooked potatoes, leaving 1/4-inch borders around the edges. This creates little boats. Place the scooped insides and the peeled tops of the potatoes in a medium bowl and mash using a potato masher or the back of a fork. Add the reserved bacon and sour cream mixture. Using a rubber spatula, mix together the filling until well combine. Spoon the filling back into the potato boats until slightly overfilled and mounded on top. Top with a sprinkling of the panko mixture and a drizzle of olive oil. Bake until the filling is heated through and the topping is golden brown, 10 to 12 minutes. Serve warm or at room temperature.

"TWICE BAKED" BABY POTATOES WITH CAVIAR

These special occasion-worthy bite-sized spuds are crowned with sour cream and caviar. Tip: these melt-in-your-mouth morsels pair especially well with a glass of bubbly-cheers!

Provided by Greg Lofts

Categories     Food & Cooking     Appetizers

Time 1h30m

Yield Makes about 35

Number Of Ingredients 8

1 1/2 pounds baby red potatoes (about the size of cherry tomatoes)
Kosher salt and freshly ground pepper
1/4 cup cream cheese, room temperature
2 tablespoons unsalted butter, melted
1/4 cup whole milk
2 tablespoons finely chopped chives, plus more for serving (optional)
Sour cream, for serving
Caviar or trout roe, for serving (optional)

Steps:

  • Preheat oven to 425°F. In a pot, cover potatoes with about 2 inches of cool water; bring to a boil. Season generously with salt and cook until potatoes are easily pierced with the tip of a knife but still holding their shape, 8 to 10 minutes; drain. When cool enough to handle, trim and discard 1/4 inch from top of each potato. (If necessary, trim bottoms flat so potatoes stand upright.)
  • Using a small paring knife, the smaller side of a melon baller, or a demitasse spoon, carefully scoop flesh from potatoes, leaving 1/4 inch flesh intact all around bottom and sides. Transfer hollowed potatoes to parchment-lined baking sheets.
  • For the smoothest texture, press potato flesh through a ricer into a bowl. Stir in cream cheese, butter, milk, and chives to thoroughly combine (or, if not using a ricer, mash to combine until smooth); season with salt and pepper.
  • Transfer potato mixture to a piping bag fitted with a plain tip, or a resealable plastic bag with a corner snipped. Pipe mixture into hollowed potatoes and bake until they are heated through and browned in places on top, 20 to 22 minutes. Let cool a few minutes; dollop with sour cream and top with caviar, trout roe, or more chives. Serve warm.

Tips:

  • Choose the Right Potatoes: Select small, waxy potatoes like baby potatoes or new potatoes, as they hold their shape better during cooking.
  • Boil Potatoes Properly: Parboil the potatoes until they are tender but still slightly firm, as they will continue to cook in the second frying stage.
  • Season Generously: Don't be afraid to season the potatoes liberally with salt and pepper, as this will enhance their flavor.
  • Use a Quality Olive Oil: Opt for a good quality extra virgin olive oil for frying the potatoes, as it will add a delicious flavor.
  • Cook Potatoes in Batches: Fry the potatoes in batches to prevent overcrowding and ensure they cook evenly.
  • Don't Overcrowd the Pan: Overcrowding the pan will result in steamed potatoes instead of crispy ones.
  • Cook Until Golden Brown: Fry the potatoes until they are golden brown and crispy on all sides, stirring occasionally to ensure even cooking.
  • Add Flavorful Herbs: Enhance the flavor of the potatoes by adding fresh herbs like rosemary, thyme, or parsley towards the end of frying.
  • Serve Immediately: Serve the twice-cooked baby potatoes hot, as they are best enjoyed fresh out of the pan.

Conclusion:

Twice-cooked baby potatoes are a delightful side dish that is both crispy and flavorful. By following these tips, you can easily make this dish at home and impress your family and friends. The key is to boil the potatoes until tender but still firm, season them generously, and fry them in a quality olive oil until golden brown. With a little practice, you'll be able to create perfectly cooked twice-cooked baby potatoes that will be a hit at any gathering.
