2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
⅓ cup brown sugar

½ tablespoon olive oil
1 (8 ounce) package bacon, diced
⅓ cup sliced green onions
¼ cup diced jalapeno peppers

  • Preheat the oven to 400 degrees F.
  • Place the sweet potatoes on a foil-lined baking pan. Bake until a paring knife inserted in the center pierces easily, about 1 hour. Cool slightly.

1/2 cup sour cream
6 tablespoons unsalted butter, room temperature, plus 6 tablespoons cold unsalted butter, cut into 1/4-inch-thick slices
1 3/4 cups packed light-brown sugar
4 teaspoons fresh lemon juice
1/2 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2/3 cup pecans, toasted, coarsely chopped
40 large marshmallows, halved crosswise

Steps:

  • Preheat oven to 400 degrees. Prick sweet potatoes with a fork. Bake until soft, about 50 minutes. Let cool slightly on a rack.
  • Cut a lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact. Scoop out flesh, leaving a 1/2-inch border on skins.   • Preheat oven to 400 degrees. Place the sweet potatoes on a parchment-lined baking sheet; bake until tender when pierced with a paring knife, about 45 minutes. Remove from oven; let cool slightly.

1 shallot, minced
1/4 cup pine nuts
1/4 cup dark raisins
2 tablespoons fresh sage, minced
1/4 teaspoon ground nutmeg
3 ounces ricotta
1 large egg, lightly beaten
2 ounces Parmesan, grated
Freshly ground black pepper
Chopped fresh herbs for garnish, such as parsley, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Pierce the sweet potatoes all over with a fork. Bake on a sheet tray until tender, about 1 hour to 1 hour and 20 minutes. Allow the sweet potatoes to cool slightly, then cut them in half and scoop the flesh into a bowl, keeping the skins intact. Set aside the skins on a sheet tray.

1/2 cup cranberry sauce
1/2 cup dried cranberries, chopped
2 tablespoons butter, softened
1/2 teaspoon salt
1/2 cup walnut pieces, toasted

Steps:

  • Preheat oven to 350 degrees.
  • Clean potatoes and pierce with fork.
  • Place on oven rack, bake for 1 and 1/4 hours or until tender, and set aside to cool.
  • Cut each potato in half lengthwise and scoop pulp out with a spoon leaving 1/4 inch shell.
  • Mash the potato pulp until smooth, stir in cranberry sauce, dried cranberries, butter and salt.
  • Spoon mixture back into each shell dividing evenly.
  • Place shells in baking pan and sprinkle with walnuts.

Poblano-Cheddar Twice-Baked Sweet Potatoes image

4 medium sweet potatoes (10 to 12 ounces each)
2 poblano chile peppers
4 tablespoons unsalted butter, plus melted butter for brushing
6 tablespoons Mexican crema (or creme frache)
Grated zest and juice of 1 lime
2 teaspoons adobo sauce (from a can of chipotles in adobo)
1/4 cup chopped scallions
Freshly ground pepper
1 cup grated mild cheddar cheese (about 4 ounces)
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 400 degrees F. Scrub the sweet potatoes and dry well; transfer to a baking sheet. Bake until easily pierced with a knife, about 40 minutes. Remove from the oven and let cool 5 minutes.
  • Roast the poblanos over the flame of a gas burner (or under the broiler), turning, until charred all over, 4 to 5 minutes. Transfer to a bowl, cover with plastic wrap and let cool. Peel off the charred skins and remove the stems and seeds. Finely chop the peppers and set aside.
  • One at a time, hold each sweet potato with a kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Mash the flesh with the butter, 3 tablespoons crema, the lime zest and adobo sauce until smooth. Stir in the poblanos and scallions; season with salt and pepper. Brush the potato skins with melted butter and season the insides with salt and pepper. Return to the baking sheet.
  • Mound the filling into the sweet potato skins and sprinkle the tops with the cheese. Return to the oven and bake until the filling starts browning and the skins are crisp, 16 to 18 minutes. Season with salt.
  • Stir the remaining 3 tablespoons crema in a small bowl with enough lime juice until thin enough to drizzle. Season with salt. Drizzle the lime crema over the sweet potatoes and top with cilantro.

I found this in an article by columnist Pam Anderson in USA Weekend (Nov. 14-16, 2003). I made it for Thanksgiving dinner at my mother's house. Since I have have a fairly large family, I decided to double the recipe. Everyone loved it! I will definitely be making this again. It's not complicated and makes a wonderful alternative to ordinary baked potatoes or mashed potatoes. And it has the rare quality of being better the next day! So now you've got something with a bit of zip to go with all of that left-over turkey! Per Serving: 159 calories, 5g protein, 14g carbohydrates, 9g fat (4g saturated), 2g fiber, 268mg sodium (these were written at the bottom of the recipe).

4 medium sweet potatoes, pricked with a fork (about 2 lbs)
1/4 teaspoon salt
fresh ground black pepper, to taste
1/3 cup buttermilk
1/3 cup milk
4 tablespoons butter
1/2 cup mini marshmallows, garnish

Steps:

  • Adjust oven rack to low position and heat oven to 400°F.
  • Place potatoes on a baking sheet lined with parchment paper or foil.
  • Bake until fork tender, about 45 to 60 minutes.
  • Let cool slightly.
  • Handling the potatoes with a potholder, slice each in half lengthwise and scoop potato flesh into a blender or food processor-- for an especially silky texture, use the blender-- leaving a 1/4-inch border of flesh to support the potato skin.
  • Puree scooped-out flesh, along with salt and pepper, until smooth.
  • With machine motor running, gradually add both milks through feeder tube.
  • Stop machine, add butter, then process until potatoes are silky smooth.
  • (Puree and potato shells can be cooled, then refrigerated in an airtight container, up to 2 days. Return to room temperature before proceeding.) Spoon puree back into each shell.
  • Just before baking, press marshmallows into potatoes.
  • Bake at 400°F until potatoes are hot and marshmallows are golden brown, 10 to 12 minutes.

2 large sweet potatoes
2 tablespoons canola oil
3 tablespoons diced onion
3 tablespoons diced red bell pepper
1 cup diced smoked ham
⅔ cup crushed pineapple, divided
½ teaspoon chipotle chile powder, or to taste
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake sweet potatoes in the preheated oven until softened, about 1 hour.
  • Heat canola oil in a skillet over medium heat; saute onion and red bell pepper until just softened, about 5 minutes. Add ham, 1/2 the pineapple, and chipotle powder; saute over low heat until heated through, about 5 more minutes.

1/4 cup orange juice

4 sweet potatoes
1 tablespoon olive oil
3 tablespoons brown sugar
2 tablespoons heavy cream
2 tablespoons butter
2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon vanilla extract
1/4 cup raisins
1/4 cup chopped pecans
2 pineapple rings, chopped
marshmallows (optional)

Steps:

  • Preheat oven to 400°F.
  • Wash potatoes and poke all over with a fork then rub with olive oil.
  • Place potatoes that have been rubbed with oil in the oven naked for about 1 hour in the middle rack or until done, let cool until you are able to handle them.
  • Once cooled slice potatoes in half and scoop out the insides being careful not to break the shell.
  • Place the potato pulp in a bowl mash until smooth.
  • Next mix in with the pulp the brown sugar, heavy cream, butter, maple syrup, cinnamon, nutmeg, and extract.
  • Fold in raisins, pecans, and pineapple.
  • Scoop pulp back into potato shells and place in a baking dish and bake for about 15-20 minutes or until heated well through.
  • Remove from oven and top with marshmallows and place back into the oven and broil until marshmallows are toasted if desired.
