Twice-baked potatoes are a classic comfort food that can be enjoyed as a side dish or a main course. This elevated version, Twice-Baked Potatoes Supreme, takes the dish to the next level with a creamy, cheesy filling, crispy bacon, and a flavorful herb crust. The recipe starts with russet potatoes, which are baked until tender, then scooped out and mashed with butter, sour cream, garlic, and a blend of cheeses. The potato mixture is then returned to the potato shells and topped with crispy bacon, a mixture of bread crumbs, grated Parmesan cheese, and chopped fresh herbs. The potatoes are then baked again until the filling is bubbly and the topping is golden brown. Serve the potatoes while hot, garnished with additional herbs and a dollop of sour cream. Also included in this article are variations of the Twice-Baked Potatoes Supreme recipe, such as a vegetarian version with roasted mushrooms and a spicy version with diced jalapeños and chili powder.

Tips:

  • For perfectly crispy skins, bake the potatoes until they are tender but still firm, then let them cool slightly before scooping out the flesh.
  • Be careful not to overmix the potato filling, as this will make it gluey.
  • If you don't have any sour cream on hand, you can substitute Greek yogurt or crème fraîche.
  • For a vegetarian version of this recipe, omit the bacon and use vegetable broth instead of chicken broth.
  • To make these potatoes ahead of time, bake them according to the recipe, then let them cool completely. Store the potatoes in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the potatoes in a preheated oven at 350 degrees Fahrenheit until they are warmed through.
