Time 45m

Number Of Ingredients 7

3/4 tsp kosher salt
3/4 tsp baking soda
2 c all purpose flour
1 Tbsp pure vanilla extract
1 1/2 c rice krispies
3/4 c sugar
2 stick unsalted butter,softened

Steps:

  • 1. Preheat the oven to 300°. In a large bowl, using an electric mixer, beat the butter with the sugar and salt until smooth and fluffy.
  • 2. Mix the baking soda with the vanilla, then add to the butter mixture.
  • 3. Add the flour, 1 cup at a time, mixing well between additions. Gently stir in the Rice Krispies.
  • 4. Lightly butter 2 baking sheets. Spoon 2-tablespoon-size mounds of cookie dough onto the prepared baking sheets, spacing them about 3 inches apart.
  • 5. Bake for 15 minutes, then remove the pans from the oven. Gently flatten the cookies with a spatula.
  • 6. Rotate the pans from top to bottom and front to back and continue baking until the cookies are lightly cracked on the top and golden brown on the bottom, about 20-25 minutes longer. Cool slightly and remove to finish cooling on wore racks.

Tips:

  • Use very cold butter and eggs. This will help the cookies keep their shape and prevent them from spreading too much.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Use a cookie scoop to drop the dough onto the baking sheet. This will help ensure that the cookies are all the same size and shape.
  • Bake the cookies until they are just set around the edges but still soft in the center. This will give them a chewy texture.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These sugar cookies are the perfect treat for any occasion. They are crispy on the outside, chewy on the inside, and full of flavor. With a few simple tips, you can easily make these cookies at home. So next time you are in the mood for a sweet treat, give these sugar cookies a try. You won't be disappointed!
