Tips:

  • For the best flavor, use fresh, ripe tomatoes. If you can't find fresh tomatoes, you can use canned diced tomatoes, but be sure to drain them well before using.
  • If you don't have white beans, you can use cannellini beans or chickpeas.
  • If you don't have fresh basil, you can use dried basil. However, fresh basil will give the crostini a more intense flavor.
  • To make the crostini ahead of time, prepare the beans and tomato mixture up to 2 days in advance. Store the mixture in an airtight container in the refrigerator. When you're ready to serve, simply toast the baguette slices and top them with the bean mixture.
  • You can also make the crostini into a salad. Simply toss the bean mixture with some mixed greens and a vinaigrette dressing.
