8 cups spinach leaves

2 cups red seedless grapes, halved

2 tsp italian seasoning (whick includes rosemary, basil and oregano)
1 tsp sweet paprika
1/2 tsp ground coriander
1/2 tsp ground fennel
1 tsp ground black pepper
3/4 tsp salt
1/4 tsp garlic powder
4 salmon fillets, skin-on (6 oz. each)
4 tsp olive oil

Steps:

  • 1. Prepare outdoor grill (or preheat broiler).
  • 2. Combine all ingredients except salmon and oil in a bowl.
  • 3. Brush each fillet (on both sides) with 1 teaspoon oil. Press spice mixture on skinless side of salmon. Let stand 15 minutes.
