¾ cup cubed prosciutto cotto (cooked ham)
¾ cup diced Swiss cheese
½ cup button mushrooms in oil, drained
⅓ cup canned corn, drained
⅓ cup sliced green olives
⅓ cup sliced black olives
⅓ cup diced pickle
⅓ cup sliced marinated artichoke hearts, drained
1 ½ tablespoons extra-virgin olive oil
1 teaspoon thyme
1 teaspoon oregano
1 (3 ounce) can tuna, drained
4 hard-boiled eggs, quartered

Steps:

3/4 teaspoon salt
1/4 cup red wine vinegar
2 tablespoons olive oil (preferably extra-virgin)
1 large egg
1 tablespoon grated Parmesan cheese
Nonstick vegetable oil spray
1 cup finely diced cooked pork
1 cup frozen petite peas, thawed
1/3 cup chopped red onion
3 tablespoons chopped fresh Italian parsley
6 large lettuce leaves
1 medium tomato, cut into thin wedges

Steps:

  • Bring large saucepan of water to boil. Stir in rice and salt. Reduce heat to medium and simmer uncovered until rice is tender, stirring occasionally, about 15 minutes. Drain rice well.
  • Whisk vinegar and oil in large bowl. Add warm rice and toss to coat.

5 cups cooked rice
1 pound shrimp, cooked, peeled and sliced in half lengthwise
2 tablespoons butter
1 1/2 cups finely diced green pepper
3/4 cup finely chopped red onion
1 to 1 1/2 cups cooked quartered artichoke hearts
1/4 cup capers
1/3 cup chopped fresh parsley
1/3 cup chopped fresh dill
10 tablespoons olive oil
6 or 7 tablespoons red wine vinegar
Salt and freshly ground black pepper to taste
2 large cloves garlic, minced
2 tablespoons chopped fresh basil
1/2 teaspoon dried oregano
2 tablespoons minced parsley

Steps:

  • Saute scallops in hot butter for about 3 minutes, just enough to cook them lightly.
  • Combine scallops with remaining salad ingredients in serving bowl.
  • Whisk oil with vinegar and beat in remaining dressing ingredients. Pour over salad and toss gently.

1/4 cup olive oil
4-1/2 teaspoons cider vinegar
1/4 teaspoon salt
Dash pepper
1 can (6 ounces) tuna, drained and flaked
2 medium tomatoes, chopped
1 small cucumber, peeled, seeded and diced
2 tablespoons chopped onion
Lettuce leaves
2 hard-boiled large eggs, sliced
Pimiento-stuffed olives and lemon wedges, optional
