3 tbsp flour
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
4 boneless pork chops (1 in thick)
2 tbsp olive oil
6 garlic cloves (pressed)
1/3 cup balsamic vinegar
1/4 cup chicken broth
1 tbsp honey
2 roma tomatoes diced
3 cups fresh baby spinach
shaved parmesan cheese

Steps:

  • Combine the flour, salt, and pepper and dredge each pork chop in the mixture.
  • Heat oil in a large skillet over medium high heat. Add pork chops to the oil and cook 2-3 min on each side until they are golden brown. Remove from skillet.
  • Add garlic to the skillet and stir about 30 seconds. Then add vinegar, broth, and honey to the skillet, stirring to scrape and mix in any bits from the bottom. Add the tomatoes to the mixture snd bring the mixture to a boil.
  • Add the pork chops back in, cover, reduce heat to low and simmer for 3-4 minutes, then add the spinach and recover for 2-3 minutes or until the spinach is wilted and the pork chops are done (165˚F internal temp).

4 boneless pork chops, 3/4 inch thick
10 sun-dried tomatoes, coarsely chopped (NOT oil-packed)
1 cup chicken broth
1/4 cup madeira wine
1 tablespoon olive oil
1 shallot, finely chopped
2 garlic cloves, finely minced
1 tablespoon fresh rosemary, chopped
1/2 cup cold water
1 tablespoon cornstarch

Steps:

  • In a small saucepan, cover the sun-dried tomato pieces with chicken broth and madeira; bring to a boil, remove from heat and allow to stand about 10 minutes to plump the tomatoes.
  • Heat the olive oil in a large non-stick skillet over medium-heat.
  • Add the pork chops and brown on both sides; remove from skillet and set aside.
  • Add shallots and garlic to the skillet and cook briefly (till they become fragrant).

2 cups low-sodium chicken broth
1/2 cup kosher salt
1/4 cup clover honey
2 tablespoons sugar
2 teaspoons black peppercorns
8 large sprigs fresh rosemary
4 cloves garlic, smashed
4 cups ice cubes
One 4-pound chicken, excess fat trimmed
Canola oil
Freshly ground black pepper

Steps:

  • For the brine, bring 6 cups water to a boil in a large saucepan. Add the broth, salt, honey, sugar, peppercorns, rosemary and garlic, stirring to dissolve the salt. Remove from the heat and add the ice cubes to cool quickly to room temperature. Place the chicken in the bucket, breast-side down, cover and refrigerate for 2 to 4 hours.
  • Remove the chicken from the brine and rinse well with cold water. Pat dry, place on a baking rack and refrigerate for at least 1 hour and up to 4 hours. This will allow the skin to dry out which will produce a crisper skin while cooking.
  • Preheat your smoker to 275 degrees F and up to 325 degrees F if your smoker can do it. Add the soaked wood chips and rosemary sprigs.
  • Brush the entire chicken with canola oil and sprinkle with pepper. Put the chicken in the smoker and place a drip pan underneath. Smoke until the breast temperature reaches 160 degrees F and the thigh reaches 170 degrees F, depending on the size of the chicken, 1 1/2 to 3 hours.
