I have been intrigued by Turkish cuisine for going on a good four years now-no, actually longer. Here's a delightful summer salad and very quick to make, too! Use organic garden fresh radishes if possible and even better a variety (of). Don't use old, yucky supermarket radishes. From turkishcookbook.com

CHINESE QUICK PICKLED RADISH SALAD WITH GARLIC
A fabulous way of adding a bit of colour along with a crisp texture in Chinese cooking; this can be made just before you are ready to serve an Oriental meal, and is one of the nicest ways I know of dressing up the humble radish! You can use red radishes, Chinese white radish - Mooli or even black radishes for this quick pickle. Serve it as an accompaniment for most Chinese or Asian meals. Make sure that whatever type of radishes you use, are fresh, firm and crisp. I prefer the red radishes for colour, but any of the radishes I have suggested work well in this simple pickle. The quantities listed below, will serve about 4 people as a generous condiment.

RADISH SALAD
Radish salad is something you see in places around the world (in the last couple of years, I have been served it in similar guises in both Mexico and Turkey), but almost never in this country. Salting the radishes first reduces their harshness while accenting their crispness. At that point, they can be dressed with a traditional vinaigrette or the more tropical (and oil-less) version here. The only trick is to slice the radishes thinly. For this, a mandoline is best.

Tips:
- Also known as Eastern radish salad, this is a classic side dish or appetizer in the Baltic countries and has a distinctly refreshing and slightly tangy flavor.
- Start with fresh, crisp radishes. Look for radishes that are firm and have a bright red or purple color. Avoid radishes that are wilted or have any blemishes.
- Use a sharp knife to thinly slice the radishes. This will help them to absorb the flavors of the dressing more easily.
- Be sure to rinse the radishes thoroughly before slicing them. This will help to remove any dirt or debris.
- If you don't have time to make the dressing ahead of time, you can use a store-bought vinaigrette. Just be sure to choose one that is light and flavorful.
- Serve the salad immediately or chill it for later. The salad will keep for up to 2 days in the refrigerator.
Conclusion:
Turp salatsi is a refreshing and easy-to-make salad that is perfect for any occasion. It is a great way to use up fresh radishes and is a healthy and delicious side dish or appetizer. This traditional dish is a great way to add some Baltic flavor to your next meal. The simple ingredients and easy-to-follow instructions make it a great choice for busy weeknights or special occasions alike.
