1/2 lb ground beef
1/2 lb ground chicken
1/2 large onion (finely chopped )
1 egg
1/2 tbsp salt (adjust to taste)
1 tsp pepper (adjsut to taste)
oil (for frying)

Steps:

  • In a large mixing bowl, combine the ground meat with the egg, chopped onion, salt, and pepper. Place a couple of tablespoons of the filling on one side of the tortilla and press the filling into a thin layer. Fold the tortilla over to cover the filling.
  • Press a fork alongside the open edge of the tortilla to seal the filling inside. Repeat the process until all your tortillas are filled and sealed.
  • Preheat the oil in a skillet over medium-low heat. Fry the chebureki one or two at a time depending on the size of your skillet until golden brown on both sides.

8 slices monterey jack cheese (about 5 ounces total)
4 slices ham (thin slices)
8 teaspoons sour cream
8 corn tortillas
1 (8 ounce) can tomato sauce
1/2 cup picante sauce

Steps:

  • Cut each slice of ham into four pieces.
  • Place 1 slice of cheese, 2 squares of ham, and 1 teaspoon of sour cream on 1 of the tortillas. Fold in half, then in half again (should be shaped like a wedge). Repeat with remaining cheese, ham, sour cream, and tortillas.
  • Arrange "turnovers" in a shallow greased baking dish. In a small bowl combine tomato sauce and picante sauce. Pour over tortillas.

TURNOVERS:
4 flour tortillas
3 large granny smith apples, diced (peeled if you prefer)
1 c chopped or sliced almonds
1/2 c chopped pecans
1/4 c sugar
2 Tbsp agave nectar
stevia to taste
1 Tbsp butter
1/2 lemon, squeezed
1 tsp cinnamon
1/4 tsp salt
ICING:
3 Tbsp powdered sugar
1/2 tsp vanilla extract
enough milk to create icing consistency

Steps:

  • 1. Preheat over to 400 degrees.
  • 2. Melt butter in large skillet, then add apples and lemon juice.
  • 3. Cook for 5-7 minutes to tenderize, then add nuts, sugar, agave, stevia, cinnamon, and salt.
  • 4. Continue cooking, adding a few TB of water as needed to make it close to a "pie filling" consistency.
  • 5. Place 1/4 filling mixture onto tortilla and fold in half. Make 4 turnovers and place on greased baking sheet.
  • 6. Spray the tops of turnovers with oil or baste lightly with butter.
  • 7. Bake for 8-10 minutes until lightly browned.

  • In a medium bowl mix the potatoes, onions, and 1/2 teaspoon salt by hand.

  • When it's cooked place a large plate over the frying pan and flip the tortilla onto it. Return to the pan and fry the other side until golden brown.
