Number Of Ingredients 7

6 medium purple-topped turnips (14 to 15 ounces), unpeeled and cut into 1/2- to 3/4-inch cubes
2 firm ripe Bosc pears (about 7 ounces each), unpeeled, cored, and cut into 1/2-inch cubes
1/4 cup vegetable oil
1 1/2 teaspoons coarse salt
2 tablespoons unsalted butter
2 tablespoons honey
1 tablespoon chopped fresh rosemary

Steps:

  • Preheat oven to 475 degrees. Line a large rimmed baking sheet with parchment paper; set aside.
  • In a large bowl, toss together turnips and pears with oil and salt until well combined. Place in an even layer on prepared baking sheet. Transfer to oven and roast, turning with a spatula once or twice during cooking, until browned and turnips are easily pierced with a paring knife, 25 to 30 minutes, rotating baking sheets halfway through baking.
  • Meanwhile, melt butter in a small saucepan over medium heat. Add honey and rosemary; let simmer for a few seconds and remove from heat.
  • Transfer turnips and pears to a large bowl and drizzle with butter mixture; toss to combine. Serve.

Tips:

  • Choose the right turnips: Look for small, tender turnips with smooth skin. Avoid turnips that are large, woody, or have blemishes.
  • Peel the turnips thinly: This will help to prevent the puree from becoming stringy.
  • Boil the turnips until they are very tender: This will help to create a smooth, creamy puree.
  • Use a good quality cheese: The cheese you use will have a big impact on the flavor of the puree. Choose a cheese that you enjoy the taste of and that will complement the other ingredients.
  • Don't overcook the pears: You want the pears to be tender but still hold their shape.
  • Season the puree to taste: Add salt, pepper, and nutmeg to taste. You can also add a pinch of cayenne pepper for a bit of spice.

Conclusion:

Turnip puree with pears and cheese is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It's easy to make and can be tailored to your own taste preferences. Whether you're looking for a simple weeknight meal or a more elegant dish for a special occasion, turnip puree with pears and cheese is sure to please.
