Toum
14 large garlic cloves, roughly chopped
2 tablespoons freshly squeezed lemon juice
1 heaping teaspoon kosher salt
2 tablespoons orange blossom water
1 1⁄3 cups canola oil
Marinade
1 tablespoon ground turmeric
2 teaspoons ground dried orange peel
1 teaspoon ground fennel seeds
3⁄4 teaspoon ground cumin
1 1⁄2 teaspoons ground coriander
1 garlic clove, grated with a Microplane
1 (1-inch) piece fresh turmeric, peeled and grated with a Microplane
1 tablespoon freshly squeezed orange juice
1 tablespoon plus 1 teaspoon orange blossom water
3⁄4 cup whole milk Greek yogurt
Chicken
One (3 1⁄2-pound) whole chicken, neck, wing tips, and innards removed
1 tablespoon plus 2 1⁄2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Special Equipment: Kitchen twine (8 inches long), instant-read thermometer (optional)

Steps:

  • Toum
  • Combine the garlic, lemon juice, salt, and orange blossom water in a blender. Pulse on the lowest setting until just combined. Then in a slow and steady stream, add the oil while continuing to blend on low, gradually increasing the speed to medium-high until the mixture has fully emulsified. The consistency should be similar to mayonnaise with some soft peaks.
  • Store in an airtight container in the refrigerator for up to 1 week. The consistency will thicken slightly after refrigeration.
  • Note: The garlic is what binds the oil with the other liquids to make more of a solidified consistency. If you double this recipe, it will be even easier for your blender to emulsify the ingredients.
  • Marinade
  • In a bowl, combine the ground turmeric, orange peel, fennel, cumin, coriander, garlic, and fresh turmeric. Then add the orange juice, orange blossom water, and yogurt and stir to combine.
  • Chicken
  • Season the cavity of the chicken with salt and pepper. Rub some of the marinade inside the cavity of the chicken.
  • Using kitchen twine, tie the legs together. I like to keep the wings loose and not tied so the breasts and wings get crispy.
  • Evenly season the outside of the chicken with salt and pepper. Place the chicken on a sheet pan and let it sit, uncovered, at room temperature for 30 minutes. Then rub the marinade all over the outside. (It may seem like a lot but use it all.) Transfer the sheet pan, uncovered, to the refrigerator and marinate overnight.
  • When ready to cook, remove the chicken from the refrigerator and let sit at room temperature for 2 hours prior to cooking. (Cooking the chicken cold will take longer and might dry out the meat.)
  • Preheat the oven to 450°F. Place the chicken breast-side up on the rack of a roasting pan. Roast for 40 to 50 minutes (if the skin is browning too quickly, decrease the heat to 375°F), until the meat between the leg and thigh feels tender to the touch or using an instant-read thermometer placed in the thigh, the temperature reaches 160° to 165°F. Remove the chicken from the oven and let rest for 15 minutes to let the juices redistribute. Cut off the kitchen twine, carve, and serve with a side of toum.

1 whole chicken, cut up (remove the skin from the legs and breasts, and reserve the wings)
Kosher salt
1 lime
2 oranges
3 cloves garlic, finely chopped
Sea salt
3 tablespoons EVOO
1 rounded tablespoon turmeric
1 1/2 teaspoons cumin seeds (half a palmful)
4 small fresh bay leaves
Two 3-inch cinnamon sticks
2 serrano or jalapeno peppers, halved lengthwise
1 cup cracked green olives or olive mix
2 tablespoons butter
One 14-ounce can chickpeas, drained and rinsed
Handful of fresh cilantro or parsley leaves, finely chopped
1 1/2 cups couscous

Steps:

  • Put the chicken wings in a small pot. Cover with water and sprinkle with salt. Simmer gently for 30 minutes.
  • Meanwhile, combine the remaining chicken pieces with the juice of the lime, the juice of 1 orange and half the garlic. Sprinkle liberally with sea salt and toss to coat. Cover and marinate at room temperature for at least 45 minutes and up to 1 hour.
  • Heat the EVOO in a large skillet over medium-high heat. Add the turmeric and cumin seeds and stir for a minute to toast the spices. Add the bay leaves, cinnamon sticks and chile peppers, and cook for a minute or 2 more. Add the chicken and turn to coat it with the spiced oil, then cook until the chicken is lightly browned, about 10 minutes.
  • Slice the remaining orange and add it to the pan along with the olives. Cook until heated through. Remove the chicken wings from the poaching liquid, and add 1 cup of the liquid to the pan. Partially cover and simmer for 20 more minutes. Remove the cinnamon sticks. (If you aren't serving the chicken immediately, cool and then store it in the refrigerator. Store any leftover poaching liquid separately. Reheat the chicken over medium heat and prepare the couscous before serving.)
  • Combine 1 1/2 cups reserved poaching liquid, the butter, chickpeas and cilantro in a large saucepan. Bring to a boil, and then stir in the couscous. Turn off the heat, cover the pan and let stand for 5 minutes. Fluff with fork. Serve the couscous with the chicken.

6 garlic cloves
2 large egg whites (see note)
2 Tbsp. fresh lemon juice
1 1/2 cups vegetable oil
Chicken and assembly:
3 Tbsp. fresh lemon juice
2 Tbsp. tomato paste
1 Tbsp. ground coriander
3 Tbsp. vegetable oil, plus more for grill
1 1/4 lb. skinless, boneless chicken thighs
4 pitas, warmed

Steps:

  • Toum:
  • Pulse garlic, egg whites, and lemon juice in a food processor until smooth. With motor running, very gradually stream in half of the oil (this will help the emulsion stay together). Scrape down sides of processor and continue to process, gradually adding remaining oil, until mixture thickens and becomes light and airy (it should cling to a spoon). Season with salt.
  • Do Ahead: Toum can be made 2 days ahead. Cover and chill.
  • Chicken and assembly:
  • Mix lemon juice, tomato paste, coriander, 1/4 cup toum, and 3 Tbsp. oil in a large bowl to combine. Transfer marinade to a large resealable plastic bag. Save remaining toum for serving.
  • Working one at a time, slice chicken thighs in half lengthwise and season generously with salt. Add to bag with marinade, seal bag, and massage marinade into chicken. Chill at least 3 hours and up to 12 hours.
  • Let chicken sit at room temperature 1 hour before grilling.
  • Prepare a grill for medium heat; oil grate. Thread chicken onto skewers, folding pieces back and forth accordion-style so they pile onto themselves (it should be about 3 strips per skewer). Grill, turning occasionally, until browned and beginning to char in spots, 10-12 minutes.
  • Serve chicken on top of pitas, with pickles and reserved toum alongside

1 teaspoon ground turmeric
3/4 teaspoon fine sea salt

1 pound boneless, skinless chicken thighs or breasts

Steps:

  • Marinate the chicken: Place the onion, 2 tablespoons olive oil, honey, dried mint, garlic, orange zest, orange juice, turmeric, salt and black pepper in a large bowl and stir to combine.   • When ready to cook, heat the remaining 3 tablespoons olive oil in a large (12-inch) skillet or frying pan over medium high and wait for the pan to become very hot. (This ensures a nice sear.) Add the chicken and the marinade to the pan, and cook until chicken is browned underneath and easily releases from the pan, 5 to 8 minutes. Stir the onions every now and then so that they cook evenly. If the pan looks dry, add a couple of tablespoons of water to the pan to prevent the juices from drying out. Flip the chicken and cook on the other side until the chicken is cooked through, another 5 to 8 minutes. Serve immediately.

1 1-inch piece fresh ginger, sliced thin
3 scallions, cut in 1-inch pieces and smashed
3/4 cup rice wine
1 teaspoon mild curry powder
2 teaspoons ground turmeric
2 teaspoons sherry vinegar

2 pounds chicken wings, separated at joints with tips discarded; or bone-in chicken thighs
