JERK ROASTED TURKEY WITH CORNBREAD-ANDOUILLE DRESSING

Jerk Roasted Turkey with Cornbread-Andouille Dressing image

Provided by Food Network

Categories     main-dish

Time 4h25m

Yield 8 servings of turkey and 2 1/2 cups of dressing

Number Of Ingredients 16

2 cups store-bought jerk sauce
1 10- to 12-pound turkey, giblets removed
Salt and freshly ground black pepper, to taste
Cornbread-Andouille Dressing (recipe follows)
1 cup unsalted butter or margarine, at room temperature
2 tablespoons unsalted butter, margarine or olive oil
1 cup 1/4-inch-diced turkey andouille sausage or smoked ham
1/2 cup finely diced onion
1/4 cup finely diced celery, including some leaves
1/2 cup finely diced red or green bell pepper
1 1/2 cups stale homemade or store-bought cornbread, cut into 1-inch cubes
2 teaspoons poultry seasoning or Bell's Seasoning
1 teaspoon finely chopped fresh thyme leaves or 1/2 teaspoon dried
Salt and freshly ground black pepper, to taste
1 large egg, slightly beaten
1 cup chicken stock or broth, as needed

Steps:

  • Rub the jerk sauce evenly over the outside and inside of the turkey. Place the turkey breast-side down in a 2-gallon heavy-duty resealable plastic bag. Squeeze out as much air as possible and seal the bag. Refrigerate and marinate for 24 to 48 hours, turning occasionally.
  • Position the oven rack near the bottom of the oven and preheat to 350˚ F. Remove the turkey from the plastic bag. Wipe off the jerk sauce inside and out, pat the turkey dry, and season generously inside and out with salt and pepper. Loosely pack the Cornbread-Andouille Dressing into the cavity. Pull back the skin over the breast and rub some butter under the skin. Rub the outside of the turkey with more butter, and sprinkle with salt and pepper. Truss the turkey if desired, and place breast-side up in a large roasting pan at least 2 inches deep.
  • Lower the oven temperature to 325˚ F and roast the turkey, basting frequently with the pan juices, until a meat thermometer registers 165˚ F, 3 to 3 1/2 hours; when the skin is golden brown, cover with foil to prevent over-browning. Remove the turkey from the oven and put it on a warmed platter. Cover loosely and let rest for 30 minutes before carving.
  • In a large skillet, melt the butter over medium heat, then add the sausage and cook about 2 minutes. Add the onion, celery and bell pepper and saute until the vegetables are tender but not browned, about 2 minutes. Remove from the heat and cool for 5 minutes.
  • In a large bowl, combine the cornbread cubes, poultry seasoning, thyme and salt and pepper. Stir in the cooled sausage mixture and egg.
  • Add the stock, a little at a time or as needed, until the mixture becomes moist but not wet. Cover with plastic wrap and refrigerate until ready to use.

TURKEY WITH CORNBREAD STUFFING AND GRAVY

Turkey with Cornbread Stuffing and Gravy image

Provided by Sandra Lee

Categories     main-dish

Time 5h

Yield 8 to 10 servings

Number Of Ingredients 10

1 (12-pound) turkey, thawed
1 box cornbread mix, prepared according to package directions
1 cup chopped celery
1/2 cup chopped green onions
2 tablespoons poultry seasoning
1 can chicken with rice soup
1 stick softened butter
3 tablespoons vegetable oil
3 tablespoons all-purpose flour
Salt and freshly ground pepper

Steps:

  • Rinse the turkey in clean water and pat dry with paper towels. Remove the gizzards and neck.
  • Place gizzards and neck into a pan of water and bring to a simmer to create broth for gravy. Simmer for 30 to 45 minutes. Remove from the heat, strain, and reserve.
  • Meanwhile, make cornbread from mix, according to package directions. Crumble cornbread into small pieces and lay onto a cookie sheet to air dry.
  • In a bowl, combine celery and green onions with air-dried cornbread. Add poultry seasoning and soup, but no water. Mix together thoroughly and place inside turkey cavities.
  • Generously cover bird completely with softened butter, tent with aluminum foil and bake according to package instructions for bird's weight. One hour before bird is finished cooking, remove foil and baste. This will allow skin to become crispy and brown without burning.
  • The turkey is done when the internal temperature registers 170 degrees F deep in the thigh, and juices run clear when flesh is pierced. The temperature of the stuffing should be 160 degrees F in the center.
  • Remove bird from oven, place on serving platter, and tent with foil. Let turkey rest for about 15 minutes so the temperature of the stuffing will reach 165 in the center and the temperature in the thigh will rise to 180 degrees F.
  • Start gravy. In a large skillet, heat the vegetable oil, add the flour and brown deeply, stirring constantly over medium-low heat. Add turkey drippings and whisk until thickened. Add gizzard broth and simmer. Season with salt and pepper, to taste.
  • Remove stuffing from bird and place in serving bowl. Carve turkey and plate with stuffing and gravy.

EASY CHILI CORNBREAD BAKE

Easy Chili Cornbread Bake image

Chili and cornbread go so well together, why not bake them in the same pan! I've been making this for years and my kids love it. I use ground turkey, but ground beef could be substituted if preferred. You can make this in individual 12- to 16-ounce casseroles if you prefer. Serve with tortilla chips and top with sour cream if desired.

3/4 teaspoon baking soda
3 large eggs
2 1/4 cups buttermilk, well shaken
1 1/2 cups grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Coat two 5-cup turkey-shaped pans with cooking spray. Melt 1/2 cup butter and let cool.
  • Melt remaining 2 tablespoons butter in a skillet over medium-high. Cook corn, jalapeno, and shallots, stirring occasionally, until soft, 4 to 6 minutes.

  • Divide the batter evenly between prepared pans; smooth tops. Transfer to oven and bake, rotating pans halfway through, until a cake tester inserted into the centers comes out clean, 30 to 35 minutes. Let cool slightly before inverting onto a wire rack. Serve warm or at room temperature.

Tips:

  • Use fresh corn kernels. Fresh corn kernels will give your cornbread the best flavor and texture. If you don't have fresh corn kernels, you can use frozen or canned corn kernels, but the flavor and texture will not be as good.
  • Don't overmix the batter. Overmixing the batter will make your cornbread tough. Mix the batter just until the ingredients are combined.
  • Bake the cornbread in a hot oven. A hot oven will help the cornbread to rise and brown properly. Bake the cornbread at 400 degrees Fahrenheit for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cornbread cool before serving. Let the cornbread cool for at least 10 minutes before serving. This will help the cornbread to set and make it easier to slice.
  • Serve the cornbread with your favorite toppings. Cornbread can be served with a variety of toppings, such as butter, honey, maple syrup, or chili. You can also add crumbled cheese, chopped green onions, or diced jalapenos to the batter before baking.

Conclusion:

Turkish cornbread is a delicious and versatile bread that can be served with a variety of meals. It is easy to make and can be customized to your own taste.
