5 medium scallions, trimmed
1 (8 ounce) can sliced water chestnuts, drained
½ pound cooked shrimp, peeled and deveined
1 pound lean ground turkey
1 large clove garlic, pressed
2 tablespoons all-purpose flour
1 tablespoon soy sauce
1 teaspoon chopped ginger
2 (16 ounce) packages wonton wrappers

Steps:

  • Cut scallions in half; slice green tops and set aside. Add white and light green parts of scallions to the bowl of a food processor with water chestnuts; pulse until finely chopped. Empty mixture into a large mixing bowl.
  • Place cooked shrimp into the food processor and pulse until cut into tiny pieces. Add cut shrimp, ground turkey, pressed garlic, flour, soy sauce, and ginger to the large mixing bowl with the scallion mixture. Blend all ingredients thoroughly using your hands.

3 lbs turkey legs
kosher salt & freshly ground black pepper
6 cups water
6 cups chicken stock or 6 cups low sodium chicken broth
2 garlic cloves
2 celery ribs, 1 coarsely chopped, 1 finely diced
1 large carrot, coarsely chopped
1 large yellow onion, coarsely chopped
1 bay leaf
1 fresh thyme sprig
1 teaspoon whole black peppercorn
1 small red onion, finely diced
40 square wonton wrappers
1 tablespoon chopped fresh dill
1 teaspoon chopped fresh dill

Steps:

  • In a soup pot, heat 2 tablespoons of the oil. Season the turkey legs with salt and pepper, add them to the pot and cook over high heat until browned on all sides, about 7 minutes. Add the water, stock, garlic, chopped celery, carrot, yellow onion, bay leaf, thyme sprig and peppercorns and bring to a boil.   • Make your wasabi mayo first. You can also make this the night before.
