TERIYAKI TURKEY BURGERS WITH GRILLED PINEAPPLE SLICES

Teriyaki Turkey Burgers With Grilled Pineapple Slices image

Healthful and Satisfying. These moist turkey burgers are sure to please your guests, great on a barbeque or in a pan. No condiments required! I developed this recipe because I was curious about whether I could make a turkey burger without using eggs or bread crumbs as filler. If you are planning to grill these on a barbeque, it helps to make the patties early and freeze them first. This will allow it to hold shape long enough for the turkey to release the small amount of fat that will hold it together.

Provided by Mike Schafer

Categories     Lunch/Snacks

Time 2h10m

Yield 4 Burgers, 4-6 serving(s)

Number Of Ingredients 8

1 lb lean ground turkey
2 cups grated carrots
1 tablespoon grated fresh ginger
1/2 cup minced onion
1 cup teriyaki sauce
1 (16 ounce) can crushed pineapple (in juice, not syrup)
1 (16 ounce) can sliced pineapple (in juice, not syrup)
4 whole grain buns

Steps:

  • Drain crushed pineapple; combine drained pineapple with carrots, onions, ginger and teriyaki sauce. Allow to marinate one hour.
  • Strain the carrots, pineapple and onions, reserving the teriyaki mixture.
  • Add the strained carrots, pineapple and onions to the turkey meat. Mix thoroughly. Form the mixture into even patties and freeze until ready to grill.
  • Drain the juice from the sliced pineapple, replace it with the reserved teriyaki mixture. Allow to marinate for an hour or more.
  • Grill frozen patties on medium heat, flip when patty turns white around the edges. After flipping, begin grilling marinated pineapple slices about two minutes on each side.
  • When patty is well done, stack on a bun with two grilled pineapple slices and serve.

ROAST TERIYAKI TURKEY

Roast Teriyaki Turkey image

Make and share this Roast Teriyaki Turkey recipe from Food.com.

Provided by Nozomarenu

Categories     Whole Turkey

Time 2h30m

Yield 1 Turkey, 10-16 serving(s)

Number Of Ingredients 17

1/2 cup soy sauce
1/4 cup mirin
1/4 cup sake
2 tablespoons rice vinegar
2 tablespoons light brown sugar
white sesame seeds, for topping
1 teaspoon potato starch, dissolved in 1 tablespoon water
1 (10 -16 lb) fresh whole turkey
2 cups chicken stock
salt
white pepper
5 tablespoons unsalted butter, softened
1/4 cup extra virgin olive oil
1 cup water
1 1/2 cups onions, sliced
1 tablespoon ginger, minced
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 500°. In a saucepan, combine the soy sauce, mirin, sake, vinegar, brown sugar and ginger. Add the cornstarch mixture and bring to a boil over high heat. Cook, stirring, until glossy and slightly thickened (about 3 minutes). Put sauce to a bowl.
  • Set the turkey in a large roasting pan and scatter the onions around it. Season the turkey inside and out with salt and white pepper. In a small bowl, blend 4 tablespoons of the butter with the olive oil and brush some over the turkey.
  • Roast the turkey for 30 minutes, or until golden in color. Baste with the butter mixture and add the cup of water to the roasting pan. Reduce the oven temperature to 325° and roast the turkey for 1 hour, basting twice with the remaining butter mixture; loosely cover the bird with foil if the breast browns too quickly.
  • Pour half of the teriyaki sauce into a bowl; baste the turkey with it. Roast the turkey for 1 1/2 hours longer, basting with the sauce from the bowl every 30 minutes; the turkey is done when the skin is completely lacquered and a thermometer inserted in an inner thigh reads 170°. Transfer to a carving board; let rest for 45 minutes.
  • Meanwhile, strain the pan juices into a bowl; skim off the fat and save the onions. Set the pan over 1 burner. Add the onions to the pan and cook over high heat, stirring, until browned, about 3 minutes. Add the pan juices, chicken stock and the left over teriyaki sauce. Bring to a boil, scraping up any browned bits from the bottom of the pan.

TERIYAKI TURKEY BURGERS WITH MUSHROOMS

Teriyaki Turkey Burgers with Mushrooms image

My roommate made these for us one night, and they were so delicious that I had to try them out for myself. I slightly altered his recipe because he added way too much cheese and sauce. These are a slightly healthier version, and still so tasty. The way you handle the meat when forming the burgers is important in order to have...

Provided by Darci Juris

Categories     Turkey

Time 40m

Number Of Ingredients 8

2 lb lean ground turkey
2 pkg bella mushrooms
1/2 c teriyaki sauce
1/4 c cooking sherry
1/4 c feta or blue cheese, crumbled
1/4 c onion, chopped
dash(es) salt and pepper
6 slice provolone cheese (optional)

Steps:

  • 1. Preheat grill to approximately 300 degrees (or medium low heat). Showing a picture of my chosen teriyaki sauce....it has natural ingredients, and very tasty.
  • 2. On the stove, heat oil over medium heat in a large skillet; add mushrooms and cook for about 5 minutes, stirring constantly.
  • 3. To the mushrooms, add the teriyaki sauce, sherry, salt and pepper. Cook until the sauce reduces and thickens....about 10 minutes. Remove from heat and let cool.
  • 4. Meanwhile, transfer turkey meat to a large mixing bowl. Add the onions and feta cheese. Once the mushrooms are cool, add about 3/4 of those as well, reserving the last 1/4 for topping. Mix thoroughly with hands.
  • 5. Form burgers, and transfer to a plate. For the best, fluffiest burgers, just grab a handful of meat, shape into a ball, then gently flatten only slightly. Do not pack the meat or press firmly to shape it. Handle the meat as little as possible.
  • 6. Transfer to grill and cook for about 5-8 minutes per side....topping with cheese (if desired) in the last few minutes.
  • 7. Remove from grill, top with reserved mushrooms, and serve.

Tips:

  • Choose the right turkey: A smaller turkey (12-14 pounds) will cook more evenly and quickly than a larger one.
  • Dry brine the turkey: This helps to evenly distribute the seasonings and moisture throughout the turkey, resulting in a more flavorful and juicy bird.
  • Use a flavorful teriyaki marinade: The combination of soy sauce, mirin, sake, and brown sugar creates a delicious and slightly sweet glaze.
  • Cook the turkey until it reaches an internal temperature of 165°F: Use a meat thermometer to ensure that the turkey is cooked to a safe temperature.
  • Let the turkey rest before carving: This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful bird.

Conclusion:

This turkey teriyaki recipe is a delicious and easy way to prepare a moist and flavorful turkey for your next holiday meal. With its perfectly balanced blend of sweet and savory flavors, this turkey is sure to be a hit with your family and friends. So next time you're looking for a new way to cook turkey, give this recipe a try. You won't be disappointed!
